Erin Oprea's Lemon Pepper Cod

Dry the cod fillets and rub them with olive oil
- 2 cod fillets (I prefer the thick end of the fillet)
- 1 tsp extra virgin olive oil
- Zest and juice of 1 lemon
- Lemon pepper seasoning (Trader Joe's makes a good one)
Crispy Boneless Buffalo Chicken Wings

1. Heat oil in a large saucepan to 375 degrees F
- 1 oil, for deep frying
- 1 cup unbleached all-purpose flour
- 2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/2 tsp paprika
- 1 egg
- 1 cup milk
- 3 boneless, skinless chicken breast, cut into pieces
- 1/4 cup hot pepper sauce
- 1 T butter
Restaurant Style Smashed Potatoes

Nuke potatoes or bake in the oven until fork-tender
- 4 whole large red potatoes
- 1 stick butter, softened and cut into pieces
- 5 slices bacon, cooked and crumbled
- 2 whole green onions, sliced
- 3/4 cups sour cream
- salt to taste (add plenty!)
- freshly ground black pepper to taste (ditto!)
- 3/4 cups French Fried onions, more for topping
Pretzel Turtles

Unwrap the caramels, then, using a rolling pin, roll out each one into a 1/8-inch-thick oval
- 1 14-ounce bag (4 dozen) soft caramels
- 1 10-ounce bag pretzel nuggets
- 12 ounces dark chocolate, finely chopped
- 2 cups natural almonds, toasted and finely chopped
Erin Oprea's Kale Salad with Chicken

Warm up the chicken in a skillet
- For the Dressing:
- 4 oz cooked and pulled chicken
- 1 handful of chopped romaine
- 2 handfuls of chopped kale
- 1 handful of Oil-Free Sauteed Almonds
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- 2 T balsamic vinegar
- 2 T extra virgin olive oil
- 2 T water
- 1 tsp minced garlic
- 1 tsp maple syrup
- 1/4 tsp onion powder
- 1/4 tsp oregano
- Pinch of salt and pepper
- Combine all dressing ingredients and mix thoroughly.
Chipotle's Guacamole

1. Choose the right avocado: It should feel squishy, yet firm (like the palm of your hand) and be a nice dark green...
- 2 ripe Hass avocados
- 2 tsp lime juice
- 2 T cilantro (chopped)
- 1/4 cup red onion (finely chopped)
- 1/2 jalapeno, including seeds (finely chopped)
- 1/4 tsp kosher salt
O'Charley's Baked Potato Soup

Dice unpeeled red potatoes into 1/2−inch cubes
- 3 lbs. red potatoes
- 1/4 cup butter, melted
- 1/4 cup flour
- 2 quarts half−and−half
- 1 pound block Velveeta cheese, melted
- White pepper, to taste
- Garlic powder, to taste
- 1 tsp. hot pepper sauce
- 1/2 lb. bacon, fried crisply
- 1 cup cheddar cheese, shredded
- 1/2 cup fresh chives, chopped
- 1/2 cup fresh parsley, chopped
Santa Fe Soup

Cook ground beef. Drain. Drain beans, but not tomatoes
- 1 lb. ground beef
- 1 can pinto beans
- 1 can kidney beans (dark red)
- 1 can black beans
- 2 cans crushed tomatoes
- 2 cans Rotel
- 2 cans shoepeg corn
- 2 packs Ranch seasoning
- 1 pack taco seasoning
- 1 1/2 cups water
Mexican Rice

Heat oil in a large skillet
- 2 Tablespoons Canola Oil
- 1/2 whole Large Onion, Chopped
- 3 cloves Garlic, Minced
- 2 cups Long Grain Rice
- 1 can Rotel (10 Ounce)
- 1 can Whole Tomatoes (14.5 Ounce)
- 2 cups Low Sodium Chicken Broth (more If Needed)
- 1 teaspoon Cumin (more To Taste)
- 1 teaspoon Kosher Salt
- Fresh Cilantro, Chopped
Erin Oprea's Lettuce Wrap Tacos

Brown the beef and drain. Add the taco seasoning with water, following the directions on the package
- Toppings:
- 1 lb lean ground beef (preferably 97% lean)
- 1/2 - 1/3 package low-sodium taco seasoning
- Bibb lettuce
- Sliced avocado
- Light or fat-free sour cream
- 2% shredded Mexican-blend cheese
- Salsa
- Diced tomatoes
- Diced jalapeno peppers
- Chopped fresh cilantro
- Premade pepper mix
