Banana Pudding Pie

It's best to prepare the pudding in advance to allow it to chill properly
- Vanilla Wafer Crust:
- Vanilla Wafer Crust (recipe below)
- Vanilla Pudding (recipe below)
- Whipped Cream (recipe below)
- 3-4 medium bananas, cut into slices
- 20 vanilla wafers plus more for decoration (see note)
- 2 1/2 cups (about 30) crushed vanilla wafers
- 1/2 cup butter, melted
- Vanilla Pudding:
- 3/4 cup sugar
- 1/3 cup all-purpose flour
- 2 large eggs
- 4 egg yolks
- 2 cups milk
- 2 teaspoons vanilla extract
- Whipped Cream:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp. vanilla
June's Pumpkin Nut Bread

Preheat oven to 325 degrees
- 1- 16 oz box of Betty Crocker Pound Cake mix
- 1 cup pure pumpkin (Libbys) I use entire can
- 2 large eggs
- 1/3 cup of milk
- 1 tsp. pumpkin spice
- 1/2 teas. ground cinnamon
- 1 cup Walnuts
Double Chocolate Coca Cola Cake

In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil
- Frosting:
- 1 cup Coca Cola (real thing, not diet)
- 1/2 cup oil
- 1 stick butter
- 3 Tablespoon cocoa
- 2 cups sugar
- 2 cups flour
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 stick butter
- 3 Tablespoon cocoa
- 6 Tablesppon of cream or milk
- 1 teaspoon vanilla extract
- 3 3/4 cups confectioner's sugar
Chickpea Salad with Tomaatoes, Basil and Parsley

Soak chickpeas in cold water overnight or for at least 8 hours
- 1 cup dried chickpeas (garbanzo beans) soaked overnight and cooked (or can use 2 cans garbanzo beans, well rinsed and drained)
- 1 T + 3 T red wine vinegar
- 2 tsp. fresh lemon juice
- 2 cups diced plum tomatoes, cut in 1/2 inch pieces then drained (can also use cherry tomatoes but drain well)
- 1/2 cup Kalamata olives, sliced into lengthwise slivers
- 3/4 cup chopped red onion (about half of a large red onion)
- 5 T best quality extra virgin olive oil
- 1/2 cup chopped fresh basil (or more)
- 1/4 cup chopped parsley (or more)
- Himalayan salt and fresh ground black pepper to taste
Crispy Baked Asparagus Fries

Directions Dredge the asparagus in the flour, dip them in the egg and then into a mixture of the panko breadcrumb...
- 1 pound asparagus, trimmed
- 1/2 cup flour
- 2 eggs, lightly beaten
- 3/4 cup panko breadcrumbs
- 1/4 cup grated parmesan
- salt and pepper to taste

- 2 Tabl. Olive oil
- 1/2 inch of Ginger, peeled, cubed and shredded
- 1/2 Tabl. Mustard Seeds
- 1 pound green beans
- 1/4 cup water
- 1/2 teas. ground cumin
- 1/4 teas. turmeric
- 1 teas. salt
- Juice of 1 Lemon
- 2 Tabl. minced calantro
