Wiener Schnitzel

Spread breadcrumbs on waxed paper
- 1/4 cup fine bread crumbs
- 1 about 3/4 thick veal( 1 1/2 lbs.) or boneless chicken breasts(cut in pieces)
- 2 tabl. Margarine
- 1 envelope or about 2 cups of instant beef broth
- 1/2 cup boiling water (xtra if needed)
- 3 Tabl. Lemon juice
- 3 Tabl. chopped Parsley
- 1/2 teas. salt
- 1/8 teas. pepper
- 1-2 eggs
- Garlic powder
Bacon Pancake Dippers

Cook bacon and set aside. Mix batter according to the package directions
- 1 recipe of the Bisquick pancake batter including the ingredients to make the batter
- 12 slices center cut bacon
- lite syrup

Cheesy Cauliflower Pancakes

Instructions 1.Cut cauliflower into florets and cook in boiling water until tender, about 10 minutes 2
- Ingredients
- 1 head cauliflower (or a 16 oz bag of frozen cauliflower)
- 2 large eggs
- 1/2-3/4 cup shredded cheddar cheese (I love cheese, so use closer to 3/4 cup)
- 1/4 cup diced green onions
- 1/2-1 cup bread crumbs (I usually need closer to 1 cup)
- 1/2 tsp cayenne pepper (more of less to taste)
- salt
- olive oil
- light sour cream (optional)
Louisiana Hot Crab Dip

Preheat oven to 325 degrees F
- 1/2 pound jumbo lump crabmeat, free of shells
- 1 (8 ounce) package cream cheese
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan
- 3 tablespoons minced green onions (white and green parts)
- 2 large garlic cloves, minced
- 2 teaspoons Worcestershire sauce
- 2 tablespoons fresh lemon juice
- 1 teaspoon hot sauce
- 1/2 teaspoon Old Bay seasoning
- Salt and pepper to taste
Vidalia Onion-Cheese Dip

Sauté onion in butter in a large skillet on medium-high heat until tender
- 3 large Vidalia onions or other sweet onions, coarsely chopped
- 2 tablespoons butter or margarine, melted
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 1 cup mayonnaise
- ½ teaspoon hot sauce
- 1 clove garlic, minced
Mini Apple Pies

Unroll your first pie crust and cut several circles out
- Mix t...he apples with:
- Start by cutting up eight cups of apples into small 1/2in bits.
- 12 tablespoons of flour
- 1 1/2 c of sugar
- 4 heaping teaspoons of cinnamon
- 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out)
- You will also need:
- 4 tablespoons of chilled butter cut into 24 equal portions.
- two boxes of pilsbury pie crusts (four chilled NOT frozen crusts)
Chicken Lettuce Wraps

Rinse the whole lettuce leaves and pat them dry, being careful not to tear them
- 16 Boston Bibb or butter lettuce leaves
- 2 pounds boneless, skinless chicken breast, cut into cubes
- 1 tablespoon cooking oil
- 1 large onion, chopped
- 1/4 cup hoisin sauce
- 2 cloves fresh garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 teaspoons minced ginger
- 1 bunch green onions, chopped
- 1/2 cup shredded carrots
- 1 teaspoon Asian (dark) sesame oil
- 1 tablespoon Asian chile pepper sauce/paste (optional, if you want some spice)
Corn Casserole

Preheat oven to 350 degrees
- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can cream-style corn
- 1 package Jiffy corn muffin mix (8 oz.)
- 1 cup sour cream
- 1/2 cup butter, melted
- 1 cup shredded cheddar cheese or your favorite
Artichoke Crab Dip/Appetizers

Cut artichokes into small pieces and place in bowl
- 1- 14 oz. can artichokes (drained)
- 1 cup grated parmesean cheese
- 1 cup Mayo
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon garlic powder
- 1/3 cup bread crumbs
- 1 can crab meat ( use to your taste)
