Sausage Muffins

- 1 Cup Bisquick
- 1 Lb, Cooked Sausage
- 4 Eggs Beaten
- 1 Cup shredded Cheddar cheese
Taco Pie

Preheat oven 350F. In a medium sauce pan, melt butter & Add milk, 2 Tbs taco seasoning, mixing well
- 1/4 cup butter
- 2/3 cup milk
- 1 package Taco Bell seasoning mix (Copycat recipe on Budget101)
- 2 1/2 cups mashed potato flakes (or left over mashed potatoes-omit butter & milk)
- 1 pound ground beef or Turkey
- 1/2 cup chopped onion
- 1/2 cup salsa
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1 cup shredded cheddar cheese
- Sour cream, optional
Corn Casserole

Combine all ingredients and pour into a greased casserole dish
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 2 eggs beaten
- 1 stick butter, melted
- 4 heaping T. all purpose flour
- 2 T. sugar
- 1/4 C. diced green pepper (you can use red, I only had green)

- Ingredients
- 3 large garlic cloves, minced
- 1 small jar (3-4 oz) sun-dried tomatoes in oil, or use 3-4 oz fat-free sun dried tomatoes
- 1 lb chicken breast tenders
- salt
- paprika (just a little bit)
- 1 cup half and half
- 1 cup mozzarella cheese, shredded
- 8 oz penne pasta (for gluten free, use Tinkyada gluten free brown rice pasta)
- 1 tablespoon basil (if using dry basil), if using fresh basil you can add more
- 1/4 teaspoon crushed red pepper flakes (at least, add more to taste)
- 1/2 cup reserved cooked pasta water (or more)
- salt, to taste

Homemade Rocky Mountain High Coconut Cream Pie

Mix sugar and cornstarch in large bowl until it resembles powder
- Directions:
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 2 cups light cream, at room temp
- 1 cup milk, at room temp
- 4 extra-large egg yolks, lightly beaten, at room temp
- 4 tablespoons unsalted butter, at room temp
- 2 tablespoons pure vanilla extract
- 1 1/4 cups sweetened flaked coconut
- 1 fully baked 9 inch pie shell
- Mix sugar and cornstarch in large bowl until it resembles powder.
- Add the light cream slowly in a steady stream, whisking constantly. Beat well.
- Add milk in the same way. Beat in egg yolks.
- Pour into heavy 2-quart saucepan, set over medium high heat, and bring to boil, stirring constantly.
- When the mixture reaches a hard boil (when bubbles continue thru stirring) reduce heat to low, and simmer for 2 minutes while continuing to stir.
- Pour the filling into medium size bowl. Beat in the butter one Tablespoon at a time, stirring each until melted.
- Beat in vanilla and coconut. Cover the surface with plastic wrap and let cool for 1/2 hour.
- Spoon filling into pie crust, chill until firm, at least 4 hours. Can decorate with whipped cream and browned coconut if so desired.
