German Potato Salad

Cook and peel red potatoes
- 1/2 lb bacon
- 1 medium onion
- 1/2 C celery
- 1 1/2 C water
- 1/4 C flour plus 1 T
- 2 tsp salt
- 1 C sugar
- 1/2 C vinegar
- 3 lb red salad potatoes
- 3 eggs hard boiled (if desired)
Parmesan Baked Pork Chops

On a plate combine the last 4 ingredients
- 4 boneless pork chops
- 1 T. olive oil
- 1 C. parmesan cheese (I used Kraft)
- 1 C. Italian bread crumbs
- 1 tsp. pepper
- 1 tsp. garlic powder
Chicken & Asparagus Crepes

Preheat the oven to 425 degrees F
- 3 tablespoons unsalted butter, plus more for the dish
- 2 1/2 cups shredded rotisserie chicken
- 1 1/2 cups ricotta cheese
- 3/4 cup grated parmesan cheese, plus more for serving
- 1/4 cup chopped fresh herbs (such as parsley, dill, chives or mint)
- Kosher salt and freshly ground pepper
- 8 store-bought crepes (about 9 inches each)
- 1 shallot, sliced
- 1/2 pound asparagus, trimmed and cut into pieces
- 3/4 cup low-sodium chicken broth
- 1 teaspoon finely grated lemon zest
Cheesy Mushroom Skillet

1 In 12-inch nonstick skillet, heat oil over high heat
- 1 1/2 teaspoons olive or vegetable oil
- 4 oz uncooked vermicelli, broken into 1-inch pieces
- 1 medium onion, sliced (about 1 cup) 1
- 1 package (8 oz) sliced fresh mushrooms (about 3 cups_
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup water
- 1/2 tsp salt
- 1 cup shredded Monterey Jack cheese (4 oz)
Strawberry Cake

In a large bowl, combine the dry cake mix, gelatin powder, water and oil
- 1 package white cake mix (regular size)
- 1 package (3 ounces) strawberry gelatin
- 1 cup water
- 1/2 cup canola oil
- 4 egg whites
- 1/2 cup mashed unsweetened strawberries
- Frosting
- 1 cup heavy cream,
- 1 cup confectioners sugar
- 2 cups fresh strawberries, sliced or halved.
Chicken Romano

Heat oil in skillet. Mix together the egg and milk
- 1 egg, lightly beaten
- 2 T milk
- 1/2 C Italian style breadcrumbs
- 1/3 C Romano cheese, grated
- 4 chicken breasts, boneless, skinless
- 1/4 C flour
- 1 1/2 T olive oil
- Basil, chopped
Baked Parmesan Tomatoes

- 4 tomatoes, halved horizontally
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- Freshly ground pepper, to taste

- 2 medium-sized onions, cut into 1/4-inch slices
- 2 teaspoons minced garlic
- 2 (26-ounce) jars spaghetti sauce
