Beef & Barley Soup

Brown steak on stove top. Remove with a slotted spoon & set aside
- 1 lb chuck steak cut into 1/2" pieces
- 2 med carrots, cut into 1/2" pieces
- 1 lg onion chopped
- 10 oz mushrooms , sliced
- 1 Tbsp tomato paste
- 4 cups low-sodium beef broth
- 1 can (14.5oz) petite cut diced tomatoes (Del Monte)
- 3/4 tsp dried thyme
- 3/4 cup barley
- 1/2 tsp salt
- 1/2 tsp black pepper
Peach-Glazed Baked Ham

For easy slicing, roast the ham a day ahead
- 16 lb lb(7.3 kg) (7.3 kg) fully cooked bone in ham
- 1/2 cup cup(125 mL) (125 mL) peach or apricot jam
- 3 tbsp tbsp(45 mL) (45 mL) peach or apricot nectar
MIXED VEGETABLE SOUP

Place all the above ingredients in a large pressure cooker and bring to a boil
- 5 cups broth (water is fine, but not as tasty)
- 1 cup tomato or vegetable juice
- 1 can peeled tomatoes, cut in small pieces
- 1 can whole kernel corn
- 1 cup carrots, chopped
- 1 cup green beans or yellow wax beans
- 1 cup onions, finely chopped
- 1 cup zucchini, thickly sliced
- 1 cup leeks, chopped
- 2 cups coarsely shredded cabbage
- 2 cups unpeeled red potatoes, diced
- 1 cheesecloth bag of fresh herbs of choice
- 2 teaspoons salt
Tuna noodle Casserole

This is a good tuna casserole recipe that my family likes
- 1 can (10 oz) Campbell Condensed Cream of Mushroom soup, or cream of celery soup (I use the low fat variety)
- 1/2 cup grated cheddar cheese
- 1/2 cup milk
- 2 Tbsp Pimentos (I use stuffed green olives)
- 1 cup frozen peas
- 2 cans tuna, drained and flaked
- 2 cups hot cooked noodles (I used whole wheat macaroni, but you could use what you have)
- 2 Tbsp dry bread crumbs (I added grated Romano cheese to the bread crumbs)
- Tbsp butter or margarine
- I also add some PC Lemon & Herb seasoning blend to sauce to taste (about a tsp)
Brown-Sugar Barbecue Chicken Drumettes

A simple, sweet barbecue sauce will please even finicky eaters
- 2 cups ketchup
- 1 cup packed light-brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cider vinegar
- Coarse salt and ground pepper
- 6 pounds chicken drumettes, patted dry
Lime & Ginger Marinade

- 2 cloves garlic, minced
- 2 limes
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 " piece ginger root, peeled and minced
- 1 tablespoon fresh mint, chopped
- salt and pepper to taste

Serve this soup hot on cold days or cold on warm ones
- 3 tbsp butter (45 mL)
- 2 leeks , thinly sliced (white and light green parts only)
- 1 onion thinly sliced
- 4 cups diced peeled rutabaga
- 1 carrot , peeled and diced
- 1 russet potato , peeled and diced
- 3/4 tsp salt
- 1/4 tsp (1 mL) pepper
- 1/4 tsp ground nutmeg
- 4 cups sodium-reduced chicken stock
- 2 cups(500 mL) water
- 1 cup 10% cream (250 mL) or milk
- 1 tsp cider vinegar (5 mL) or white wine vinegar
- 1/3 cup crumbled Cashel blue cheese (75 mL)
- 2 tbsp finely chopped fresh chives (30 mL)or parsley
Basic Beef Meatballs

- 1 1/2 lbs lean ground beef
- 1/3 cup quick cooking oats
- 3 Tbsp HP Sauce
- 1 egg
- 1/2 medium minced onion
- 1 1/2 tsp Mrs Dash
- Or use your favorite herbs & spices
