Black-bean burger

cook pasta in a large saucepan of boiling water until very soft, 15 min
- 1/2 cup uncooked rotini or other spiral pasta
- 1 small onion, finely chopped (about 1 cup)
- 540 mL can black beans, rinsed, drained and patted dry
- 1/4 cup ketchup
- 1/4 cup chopped parsley
- finely grated zest from one lemon
- 1/4 tsp salt
- 2 garlic cloves, minced
- 2 tbsp safflower oil

- 1 cup corn flake crumbs
- 1/4 cup freshly grated Parmesan cheese
- 1 tsp paprika
- 1 tsp marjoram
- 1/2 tsp each dried thyme and seasoned salt
- 1/4 tsp each garlic powder, onion powder and freshly ground black pepper
- 1/8 tsp cayenne pepper
- 1 cup buttermilk
- 1/2 cup whole wheat flour
- 4 large chicken thighs (bone-in; remove skin)
- 4 large chicken drumsticks (remove skin)
- 2 tbsp butter, melted
- Safflower oil or cooking spray to coat baking pan
Ruby Red Beet Soup

1. Peel beets, onion and potato
- 750 g (1 1/2 lb) beets
- 1 onion
- 1 large baking potato
- 1.5 l (6 cups) sodium-reduced chicken broth
- 2 strips orange peel
- 15 ml (1 tbsp) red wine vinegar
- Salt and pepper, to taste
- Low-fat thick plain yogurt (such as Greek yogurt), for garnish
- Chopped fresh chives, for garnish

- 2 cups lukewarm water
- 2 tsp salt
- 2 Tbsp sugar
- 2 Tbsp vegetable oil
- 1 1.2 tsp instant yeast
- 6 cups flour
HAMBURGER BARLEY VEGETABLE SOUP

In 5 quart Dutch oven, brown ground beef and drain
- 1 1/2 lb. ground beef
- 6 c. water (only use 4 in crockpot)
- 3 beef bouillon cubes
- 2 c. sliced carrots
- 1 1/2 c. coarsely chopped onions
- 1 1/2 c. coarsely chopped celery
- 1/2 c. coarsely chopped green pepper
- 1/3-1/2 c. barley
- 2 tsp. salt
- 1/4 tsp. pepper
- 28 oz. can whole tomatoes, undrained
- 8 oz. tomato sauce
- 2 bay leaves
- 1/4 c. ketchup

- 1 large tub of cool whip
- 1 large box of orange Jello
- 19 oz pineapple tidbits (drained)

Pineapple Rosé Sangria

- 2 cups 100% pineapple juice
- 1 pint raspberries
- 1 pint blackberries
