This is my stuffing recipe for turkey, but you can bake it on its own
- 1 lb bulk sausage meat
- 2 onions, chopped
- 2 stalks celery, chopped
- 2 apples, peeled, cored and sliced
- 1 Tbsp crumbled dried sage
- 1 tsp each dried thyme and marjoram
- 1 1/4 cups chicken stock
- 10 cups cubed stale bread
- 1/2 cup chopped fresh parsley
- salt and pepper
Tomato Sauce

In medium saucepan over medium heat, cook bacon until browned
- 2 slices bacon or 2 oz salt pork, sliced
- 1/3 cup onion, diced
- 1/3 cup carrots, diced
- 1/3 cup celery, diced
- 2 bay leaves
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh oregano
- 1 tsp dried basil
- 1/2 tsp peppercorns, crushed
- 1/3 cup red wine
- 1 28 oz can plum tomatoes
- 1 tbsp tomato paste
- 1 cup chicken stock
- salt and pepper
