Raspberry-Chocolate Gelatin

Puree the raspberries with 3/4 cup sugar and 1/3 cup water in a blender
- 3 cups raspberries, plus more for topping
- 1 cup sugar
- 6 teaspoons unflavored gelatin powder (about three 1/4-ounce packets)
- Cooking spray
- 2/3 cup half-and-half
- 2 ounces semisweet chocolate, finely chopped
- Whipped cream, for topping
Chili Mac

- 1-1/2 lb(680 g) extra-lean ground beef
- 1 tbsp (15 mL) olive oil
- 1 small onion, chopped
- 2 ribs celery, chopped

- 2 cloves of garlic, minced
- 2 tbsp (30 mL) chili powder
- 1 tsp (5 mL) ground cumin

Slow-Cooked Sirloin

In a large nonstick skillet coated with nonstick cooking spray, brown beef on both sides
- 1 boneless beef sirloin steak (11/2 pounds)
- I 1 medium onion, cut into 1 -inch chunks
- 1 medium green pepper, cut into 1-inch chunks
- 1 can (141/2 ounces) reduced-sodium beef broth
- 1/4 cup Worcestershire sauce
- 1/4 teaspoon dill weed
- 1/4 teaspoon dried thyme

- Dash crushed red pepper flakes

Slow Cooker Peppered Steak

- 1-1/2 to 2 pounds beef round steak
- 2 tablespoons cooking oil
- 1/4 cup soy sauce
- 1 cup chopped onion
- 1 garlic clove, minced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground ginger
- 4 tomatoes, cut into eighths or 1 can (16 ounces) tomatoes with liquid, cut up
- 2 large green peppers, cut into strips
- 1/2 cup cold water

- 3 eggs
- 2 tablespoons milk
- 1/2 teaspoon salt
- 2 cups all-purpose flour

Penne with Peppered Beef

- 12 oz penne pasta
- 1 tbsp black peppercorns, cracked
- 1 1/2 tsp salt, divided
- 1 lb sirloin steak
- (about 1 inch/2.5 cm thick)
- 1 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 large red onion, sliced
- 2 tsp sweet paprika
- 1/2 tsp dried thyme or tarragon
- 3 tbsp all-purpose flour

- 1 cup beef stock
- 2 tsp Dijon mustard

- 8 slices good-quality white bread
- 1/2 cup fig or plum preserves
- 8 slices mild Provolone or Fontina cheese
- 8 slices prosciutto cotto with rosemary, such as Citterio brand
