- 1 Cup Dark Brown Sugar
- 1/2 Cup Paprika
- 2 1/2 TBS coarse ground black pepper
- 1 1/2 tsp. chili powder
- 1 1/2 Tbs garlic powder
- 1 1/2 Tbs onion powder
- 1 tsp cayenne pepper
- 2 Tbs coarse kosher salt

Directions Preheat oven to 350 degrees
- 3/4 C. butter, softened
- 1 1/4 cups light brown sugar, packed
- 3 eggs
- 2 Tbs. crystallized ginger, minced

Breakfast Burritos to freeze

Make ahead burritos to freeze, either for a crowd or take out one
- 1 pound ground pork sausage
- 1 lb. frozen cubed Ore Ida potatoes
- 12 eggs, beaten
- 2 T. milk
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 T. butter
- 2 10 oz. cans green chili sauce
- 12-16 burrito sized flour tortillas (I used regular size whole wheat tortillas this time and was able to make about 10 burritos.)
- 2 cups cheddar cheese, grated

Loaded Baked Potato Dip with Homemade Chips

A very thick dip that works well with heavy potatoe chips, Ruffles, Pringles
- For the chips:
- 1 pound small white or gold potatoes
- 2 tablespoons canola oil
- 1 teaspoon kosher salt
- Freshly ground black pepper, to taste
- For the dip:
- 8 ounces (1 cup) sour cream (light is fine)
- 4 ounces cream cheese, at room temperature
- 8 ounces (about 2 cups) grated sharp cheddar cheese
- 8 slices bacon, cooked and crumbled
- 1/4 cup snipped chives, plus additional for garnish
- 1 tablespoon powdered ranch seasoning mix
- 1/4 teaspoon Worcestershire sauce

1. Preheat the oven to 350° and line a large baking sheet with parchment paper
- 1 1/2 cups plus 2 tablespoons all-purpose flour
- 1/2 cup plus 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature and cut into 1/2-inch cubes
- 1 1/2 cups packed dark brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons instant espresso powder
- 1 teaspoon pure vanilla extract
- 2 large eggs

- 2 9 inch pie crusts (I used the Pillsbury refrigerated pie crusts)
- Oil for frying

Turkey Enchiladas with Fire-Roasted Tomatillos

- 1 1/2 pounds tomatillos, husked and cut in quarters
- 3 cloves garlic
- 2 jalapenos, stemmed and seeded
- 1 small sweet onion, rough chopped
- Olive oil
- Kosher salt and freshly ground black pepper
- 1/2 cup low-sodium chicken stock
- 1/2 bunch fresh cilantro
- Juice of 2 limes
- 3 tablespoons olive oil
- 1 pound lean ground turkey
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon dried oregano
- 1/2 small yellow onion, finely diced
- Kosher salt and freshly ground black pepper
- Eight 8-inch flour tortillas
- 1 cup shredded Jack cheese
- 1/2 cup crumbled queso fresco
- Chopped fresh cilantro, for garnish
- 2 cups sour cream, for serving
