Coconut Layer Cake

1. For the Cake: Adjust oven rack to lower-middle position and heat oven to 325 degrees
- 1 large egg
- 5 large egg whites
- 3/4 cup cream of coconut
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 2 1/4 cups cake flour (9 ounces), sifted
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 3/4 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), cut into 12 pieces, softened, but still cool
- 2 cups packed sweetened shredded coconut (about 8 ounces)
- BUTTERCREAM ICING
- 4 large egg whites
- 1 cup granulated sugar
- pinch table salt
- 1 pound unsalted butter (4 sticks), each stick cut into 6 pieces, softened, but still cool
- 1/4 cup cream of coconut
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
Peppery Steak Soup

This should be a spicy, peppery flavor
- 1 lb. ground sirloin
- 1 1/2 lb. tenderized round steak
- 1 (medium to lg.) pkg frozen veggies
- 1 can tomato soup
- 1 can tomato paste
- 1 small diced onion
- 1 Tbsp. flour
- Salt to taste
- Approx. 1 tsp of cracked peppercorns, then more to taste
- water
Chai Tea Eggnog Cookies

The chai gives this cookie a kick while the eggnog topping shows a sweet side
- 1 chai tea bag
- 1 (17.5 ounce) package sugar cookie mix
- 1/2 cup melted butter
- 1 large egg
- 4 tablespoons eggnog, divided
- Cinnamon sugar
- 1 cup powdered sugar
- 1/2 teaspoon freshly grated nutmeg
Cracker Candy

- 2 cups Sugar
- 1/2 cup Milk
- 1/4 lb., crushed Soda Crackers

Makes 2 loaves To achieve the proper dough consistency, make sure to weigh your ingredients
- 8 tablespoons unsalted butter
- 3 3/4 cups (20 2/3 ounces) bread flour, plus extra for work surface
- 3/4 cup (2 3/4 ounces) nonfat dry milk powder
- 1/3 cup (2 1/3 ounces) granulated sugar
- 1 tablespoon instant or rapid-rise yeast
- 1 1/2 cups warm water (110 degrees)
- 1 large egg, lightly beaten
- 1 1/2 teaspoons salt
- 1 1/2 cups (7 1/2 ounces) golden raisins
- FILLING
- 1 cup (4 ounces) confectioners' sugar
- 3 tablespoons cinnamon

- 1 teaspoon chili-garlic sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon finely grated fresh ginger
- 1/4 cup fresh orange juice
- 2 teaspoons cornstarch
- 4 teaspoons peanut oil
- 12 ounces boneless, skinless chicken breast halves, cut into 1-inch pieces

- 1/2 red onion, thinly sliced
- 1/4 cup rice vinegar
- 1/8 cup sugar

- 1 lb. bittersweet (not unsweetened) or semi-sweet chocolate, chopped

- 1 3/4 cups (packed) light brown sugar
- 4 large eggs
- 1 tbsp. vanilla extract
- 5 1.4 oz. chocolate toffee bars, coarsely chopped
