Melt butter, stire in crumbs and peanuts
- 1/3 cup mar.
- 1 cup graham craker crumbs
- 3/4 cup chopped dry roased peanutes
- 12 oz cream cheese, softened
- 2/3 cup creamy peanut butter
- 1 14oz can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp vanilla
- 1 4 1/2 oz cool whip
Tacos Al Pastor

1)Combine pork and next 9 ingredients in a large zip-top plastic freezer bag
- 1 lb pork tenderloin, cut into ½-inch cubes
- 1 (8oz) can pineapple tidbits in juice, drained
- 1 medium onion, chopped
- ¼ cup chopped fresh cilantro
- 1 Tbsp Mexican-style chili powder
- 1 tsp ground cupin
- 1 tsp dried oregano
- 1 tsp pepper
- 1 tsp chopped garlic
- ¾ tsp salt
- 1 Tbsp canola oil
- 6 (8-inch) soft taco-sized corn or flour tortillas, warmed
- Toppings: chopped radishes, fresh cilantro leaves, crumbled queso fresco, chopped onions, chopped jalapeno

In a small heavy saucepan melt the chocolate and butter over medium heat
- ¾ cup semisweet chocolate pieces
- ¼ cup butter
- 2/3 cup sugar
- 1 5oz can evaporated milk (2/3 cup)

Combine first 4 ingredients, then add flours
- 3 1/4 cup warm water
- 2 packs dry yeast
- 2 Tbls sugar
- 3 tsp salt
- 2 1/2 cup whole wheat flour (or 1 1/2 cup with 1/4 cup oaut meal, 1/4 cup wheat germ, and 1/2 cup soy flour)
- 4 1/2 all purpose unfleached flour

Cheese 'N Herb Sticks

Heat oven to 350. Grease large cookie sheet
- 2 Tbls grated parmesan cheese
- 1/4 tsp garlic salt
- 1/4 tsp basil leaves
- 11 oz can sof breadsticks
- 1 egg, beaten
Classic Lasagna

1)Sauce: Saute onions in hot oil in a 3-quart skillet over medium-high heat 5 minutes or until tender
- Italian Meat Sauce:
- 2 medium onions, chopped
- 1 Tbsp olive oil
- 4 garlic cloves, minced
- 1 lb lean ground beef
- 1 14.5oz can basil, garlic, and oregano diced tomato sauce
- 1 bay leaf
- 1 tsp dried Italian seasoning
- 1 tsp salt
- ½ tsp pepper
- Lasagna:
- 12 uncooked lasagna noodles
- 8 cups boiling water
- 1 Tbsp olive oil
- 1 16oz container ricotta cheese
- 2 large eggs, lightly beaten
- ¼ cup grated Parmesan cheese
- ¼ tsp salt
- ¼ tsp pepper
- 18 thin part-skim mozzarella cheese slices, divided
Boiled Peanut Hummus

Process first 7 ingredients in a food processor until coarsely chopped, stopping to scrape down sides
- 1 cup shelled boiled peanuts
- 2 Tbsp tahini
- 2 Tbsp fresh lemon juice
- 1 Tbsp chopped fresh parsley
- 1 tsp minced fresh garlic
- ¼ tsp ground cumin
- Pinch of ground red pepper
- 2 Tbsp olive oil
- Garnishes: olive oil, shelled boiled peanuts
- Pita rounds or pita chips
Chicken and Dumplings

Bring chicken broth to a boil
- 3 - 14 1/2 oz cans chicken broth
- 5 - 8" flour tortillas
- 1 - 12 1/2 oz can of chunk white chicken meat (swanson's)
- 1 - 5 oz can of evaporated milk
- salt
- pepper
- Wondra flour (regular flour works just fine too)
Chili Con Queso

Combine all ingredients and heat slowly until well blended (20-60 minutes)
- 1 lb velveeta cheese
- 1 sm can tomato paste
- 1 can green chili peppers, 4oz chopped
- 1/2 cup can milk
- 1/2 tsp comino seed(or ground cumin
- 1/2 tsp salt
- 1 Tbls chili powder
- 1 medium onion, chopped
