- 3 cups baby gold potatoes, halved
- 1 leek, sliced
- 1 crisp, sweet apple, chopped
- 2 teaspoons fresh thyme leaves, coarsely chopped
- 4 cloves garlic, coarsely chopped
- 2 tablespoons canola oil, divided
- 1 3/4 lb boneless, skinless chicken breasts
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper, divided
- 1/4 cup unsalted chicken broth
- 1/4 cup maple syrup
- 1 tablespoon coarse ground mustard
- 1 tablespoon apple cider vinegar
- Prep
- Halve potatoes. Halve (well-rinsed) leek lengthwise, then cut into 1/2-inch-thick slices (white part only; 1 cup).
