Chicken Breasts With Mushrooms

Make the mushroom topping: Slice the mushrooms, or, if they're small, quarter them
- 1/2 pound mushrooms, cleaned and stems trimmed
- 2 tablespoons olive oil
- salt, to taste
- 3 cloves garlic (to taste), minced or pressed
- 1/2 teaspoon crumbled dried rosemary
- 1/4 teaspoon dried thyme
- 1/2 cup dry white wine
- 1 1/2 cup chicken or vegetable broth, or more as needed
- freshly ground black pepper, to taste
- 2 whole chicken breasts, split, boned and skinned
- OR
- 4 half breasts of chicken
- Chopped fresh parsley, rosemary or thyme leaves for garnish
Squab A La Duxeles

Worth the effort. Great for a romantic dinner
- 2 slices bacon
- 4 squab or cornish game hens
- 6 tablespoons butter
- 3 scallions, minced
- 3 shallots, minced
- 1/4 pound mushrooms, minced
- Salt and Pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 2 teaspoons minced parsley
- 1/2 cup dry white wine
- 3/4 cup beef broth
CORN FRITTERS

Mix and drop by tablespoon in hot fat
- Sauce for Fritters:
- 1 can cream corn
- 1 tsp. baking powder
- 1 egg
- 1/2 c. flour
- 1 c. sugar
- 1 c. water
Pilaf With Chicken Livers

A Turkish dish. My preference is to reduce the amounts of butter and salt from what is shown
- 1 lb chicken liver, washed and patted dry
- 4 tablespoons butter
- 1 teaspoon salt
- pepper
- 1 1/2 cups thinly sliced scallions
- 2 medium tomatoes, peeled, seeded and chopped
- 2 tablespoons pine nuts
- 2 tablespoons chopped almonds
- 2 tablespoons raisins
- 1 cup uncooked white rice
- 2 tablespoons chopped fresh parsley

Fish Fillets With Mushroom-Lemon Sauce

An easy fish dish that can be made in about 30 minutes
- 1/2 lb fresh mushrooms, sliced
- 4 -6 green onions, chopped
- 1/4 cup butter, melted
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 tablespoon fresh parsley, chopped (half the amount if using dried)
- 1 teaspoon salt
- 1 teaspoon lemon rind, grated
- 1/8 teaspoon pepper
- 24 ounces fish fillets (6 4-oz fillets of tilapia, snapper, grouper, orange roughy)

- 2 Tablespoons butter
- 1 1/2 Pounds ground hamburger
- 1 Cup cooked minute rice
- 1 Teaspoon salt
