- 2 tablespoons olive oil
- 4 garlic cloves
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 teaspoon ground annatto or achiote (may substitute saffron, if desired)
- 6 whole chicken legs (thighs included)
- 4 cups reduced-sodium chicken broth
- 1 (15-ounce) can chopped tomatoes
- 2 tablespoons vinegar
- 1/3 cup green olives, plus more for garnish
- 1 tablespoon capers, drained, plus more for garnish
- 1/2 teaspoon dried oregano

- 6 cups pared apples
- 1 tablespoon lemon juice
- 1 tablespoon water
- 3/4 cup brown sugar, firmly packed
- 1/2 cup flour
- 1/4 cup rolled oats (quick cooking)
- 1/3 cup soft butter
- 1 teaspoon cinnamon
Southwestern Potato Salad

Place potatoes in large saucepan with 2 inches of boiling water
- 5 large red or white boiling potatoes (about 2 pounds total)
- Boiling water
- 1/4 pound bacon
- 1/2 cup canned diced green chilies, drained
- 1/3 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 1/3 cup vegetable oil
- 3 tablespoons white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 3 drops hot pepper sauce
