Suzanne's recipe
- 1 , 2-3 pount cooked crab
- 1/2 cup olive oil
- 1 small white onion, chopped
- 1/4 cup chopped green pepper
- 1 stalk celery, finely chopped
- 2 large cloves garlic, minced
- 1/4 cup chopped parsley
- 1 cup dry white wine
- 1 cup fish stock or clam broth
- 1- 8 oz. can tomato sauce
- 1- 28 oz. can Italian plum tomatoes chopped (reserve juice)
- 1 Tablespoon Italian mushrooms, soaked
- Dasdh cayenne pepper
- Sal and Pepper to taste
- 1/2 teaspoon basil
- 1 bay leaf
- 1 pound ling cod (large chunks)
- 1/2 pound shrimp or prawns (shelled & deveined but tails left on)
- 1 1/2 pounds clams, in shells
Saffron Sauce for Fish - Spain

This is a sauce often used for fish
- 1 pint fish stock
- 1/4 teaspoon saffron thread
- 1/2 cup butter
- 1/2 cup flour
- 1 small red pepper, seeded and cut into strips
- 1 small green pepper, seeded and cut into strips
- 1 garlic clove, crushed and chopped
- 2/3 cup cream
- 3 tablespoons madeira wine
- 1 teaspoon lemon juice
Balsamic-Beer Flank Steak

Try this on your barbecue
- 1 1/2 lbs flank steaks (or inside round or sirloin tip)
- 1/2 cup beer or 1/2 cup ale or 1/2 cup sherry wine
- 2 -3 garlic cloves, minced
- 1/4 cup ketchup
- 1 tablespoon chili powder
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 2 tablespoons grainy mustard or 2 tablespoons Dijon mustard
- salt and pepper
Crunchy Garbanzo Beans

An addicting crunchy, cheesy snack that is great for parties or as an after school snack
- 2 tablespoons olive oil
- 2 (15-ounce) cans BUSH'S Garbanzo Beans, drained and rinsed
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh rosemary
- 3 tablespoons freshly grated Parmigiano-Reggiano cheese
Chicken Salad Veronique

Was a favorite recipe of my mother's though she never made it for the family
- 1/2 cup mayonnaise
- 2 tablespoons heavy cream or sour cream
- 1/2 teaspoon curry powder
- 2 tablespoons chutney chopped
- 1 cup cooked chicken, cut to bite size
- 1 cup white grapes
- half cantaloupe, peeled and cut in wedges
Chicken Marsala with Mushrooms

Directions Preheat the oven to 375 degrees F
- One 4 to 5-pound chicken (organic and free range, if possible), cut into 10 pieces
- Kosher salt and freshly ground black pepper
- 3 tablespoons canola or vegetable oil
- 4 cups sliced white button mushrooms
- 2 cloves garlic, minced
- 1/2 medium onion, finely diced
- 1 tablespoon tomato paste
- 3 sprigs fresh thyme
- 1 cup dry marsala
- 1 1/2 cups low-sodium chicken broth
- 4 tablespoons unsalted butter, chilled, cut into cubes
- Kosher salt and freshly ground black pepper
- Juice of 1/2 lemon
- 2 to 3 tablespoons chopped fresh Italian parsley

- 1 cup soft shortening
- 2 cups brown sugar (packed)
- 2 eggs
- 1/2 cup sour milk, buttermilk or water
- 3 1/2 cups sifted flour
- 1 teaspoon baking soda
