Crock-Pot White Beans

This is a hearty & inexpensive recipe that is just delicious and best of all you can throw it in the old crock pot ...
- 1 lb dried great northern beans
- 6 cups water
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 2 stalks celery, with leaves, chopped
- 1/2 large bell pepper, chopped
- 2 cups of chopped fresh kale
- 2 1/2 teaspoons cajun seasoning salt (I use Tony Carcher's)
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons dry oregano
- 1 1/4 teaspoons garlic powder
- 2 bay leaves
- 12 -16 ounces cajun style andouille sausages, cut into bite-size pieces (or any firm, smoked sausage)
Oatmeal Cake with Topping

Another recipe that I have had for years and don't know who gave it to me
- Cake:
- 1 1/4 cup boiling water
- 1 cup oats
- 1 cup brown sugar
- 1 cup white sugar
- 1/2 cup butter
- 2 eggs
- 1 1/3 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Topping:
- 1 cup brown sugar
- 1/4 cup canned evaporated milk
- 1 cup cocoanut
- 1/2 cup chopped nuts
- 6 tablespoons melted butter
- 1/2 teaspoon vanilla
Low-Glycemic Stuffed Peppers

Preheat the oven to 350 degrees F
- 1 1/2 cups cooked brown rice
- 3 small Roma tomatoes, chopped
- 1 small sweet onion, chopped
- 2/3 cup canned red kidney beans, rinsed and drained
- One 4 1/4-ounce can sliced ripe olives
- 1/4 cup pine nuts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 large orange or yellow bell peppers, cored and seeded, with bottoms intact
- One 8-ounce can tomato sauce
- 1/4 cup water
- 1 clove garlic, crushed
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Nonstick cooking spray
- 6 tablespoons grated mozzarella cheese
Crab-Stuffed Mushrooms

Wash mushrooms well, remove stems, and set caps aside
- 1 cup cooked flaked crab
- 8 ounces cream cheese, softened
- 1 teaspoon lemon juice
- 2 dashes Worcestershire sauce
- 1/4 teaspoon basil
- 1/4 teaspoon garlic powder
- 2 scallions, minced
- 1/8 teaspoon lemon pepper
- 24 large mushrooms
- 1/2 cup cheddar cheese, grated
- 2 Tablespoons freshly grated parmesan cheese
Garlicky Tomato-Basil Vinaigrette

Combine ingredients in a food processor or blender
- 2 Roma tomatoes, cut into quarters
- 1/2 cup chopped basil, loosely packed
- 2 garlic cloves, minced
- 1/2 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 2 teaspoons tomato paste
- 1/2 teaspoon coarse salt
Cheese Stuffed Chicken Thighs

Preheat oven to 450F. Sprinkle both sides of thighs with salt and pepper
- 8 boneless, skinless chicken thighs
- 1/4 teaspoon coarse salt
- Freshly ground black pepper
- 1/2 pound provolone cheese, diced
- 1/2 cup chopped fresh sage
- 1 cup breadcrumbs
- Finely grated rind of 1 lemon
- 3 eggs, slightly beaten
- 1/4 cup extra-virgin olive oil
- 2 tablespoons honey

- Glaze:
- 1 1/2 cups brown sugar (packed)
- 2 eggs
- 1 1/3 cups sifted flour
- 2/3 cup cut-up fresh orange slices, with white skin left on (1 large or 2 small oranges)
- 2/3 cup cut-up pecans
- Gratedrind of 1 orange
- 2/3 cup sifted confectioners' sugar
- 2 tablespoons cream

- 8 boneless chicken breast halves
- 1/4 lb sliced swiss cheese (4 slices)
- 1/4 lb sliced ham (4 slices)
- 1 (10 ounce) can cream of chicken soup
- 2 cups shredded white cheddar cheese

- Four 6-inch corn tortillas, halved and cut crosswise into 1/4-inch strips
- 1 clove garlic
- 1 jalapeno chili, seeds and ribs removed
- 2 ripe avocados, preferably Haas, skin and pit removed
- 1 tablespoon lime juice
- 1/4 teaspoon tabasco sauce, plus more to taste
- 3 1/2 cups water
- 1 1/2 teaspoons salt
- 1/4 teaspoon fresh-ground black pepper
