Korean Marinade

Combine all ingredients in a jar; shake well
- 1/2 cup reduced-sodium soy sauce
- 2 tablespoons sesame oil
- 1/4 cup rice vinegar
- 1/4 cup dark brown sugar
- 2 cloves garlic, minced
- 2 tablespoons minced, peeled gingerroot
- 4 green onions, minced
- 2 tablespoons Sriracha or chile paste with garlic
- 1/4 cup sake or sherry
Mediterranean Chicken

Pre-heat the oven to 400°F
- 1/3 pound provolone cheese, cut into 1/4-inch cubes
- 1/3 pound salami, finely chopped
- 1 small onion, finely chopped
- 1/2 cup fresh parsley, finely chopped
- 2 cloves garlic, finely chopped or grated
- 1 small red chili pepper, such as Fresno, finely chopped
- 4 boneless, skinless chicken breasts, butterflied (slit horizontally, then opened like a book)
- Salt and pepper
- 2 tablespoons extra virgin olive oil (EVOO)
- 1/2 cup red wine
- 1 can crushed tomatoes (14 ounces)
- 1/4-1/2 cup chicken stock
- A few basil leaves, torn
- Crusty bread, for mopping

1. Season the chicken thighs with salt and pepper
- 4 bone-in, skin-on chicken thighs (about 1 1/2 pounds)
- Kosher salt and freshly ground black pepper
- 2 tablespoons canola, vegetable, or light olive oil
- 3/4 pounds fresh oyster mushrooms, or other varieties like shiitake or maitake
- 1 pound fingerling potatoes (about 4 cups), sliced in half lengthwise
- 1 medium onion, finely chopped (about 1 cup)
- 1 1/2 cups homemade or store-bought low sodium chicken broth
- 1 tablespoon cold butter
- 2 tablespoons fresh juice from one 1 lemon
- 2 tablespoons chopped parsley leaves

- 3 1/2 cups semisweet chocolate chips
- 2 cups (4 sticks) unsalted butter, at room temperature, cut into chunks
- 1 1/2 cups sugar
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 5 eggs, lightly beaten
- 4 cups chopped walnut pieces
- 1 tablespoon water

Vegetables with poached eggs and mornay sauce
- Mornay Sauce:
- 1 medium onion, chopped fine
- 1 clove garlic, chopped very fine
- 1/3 cup olive oil
- 1 1/2 pounds eggplant, peeled and cubed
- 2 medium-sized zucchini, sliced
- 3 green peppers, cut into strips
- 2 or more teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon chopped fresh basil
- or 1 teaspoon dried basil
- 6 ripe tomatoes, peeled and seeded
- or 1 20-oz can Italian plum tomatoes
- 5 tablespoons butter
- 3 tablespoons flour

- 1/4 to 1/2 cup grated parmesan cheese
