Curried Potatoes and Chickpeas

Directions Put the potatoes, 2 teaspoons salt and enough cold water to cover in a medium saucepan
- 1 1/2 pounds Yukon gold potatoes, peeled and cut into 3/4-inch chunks

Melt butter in a large skillet over medium heat
- 3 tablespoons butter
- 1/2 cup chopped onion
- 1 (16 ounce) can whole peeled tomatoes, drained and chopped
- 1 cup water
- 1/2 cup chopped green bell pepper
- 1 (4 ounce) can sliced mushrooms
- 1 tablespoon chopped fresh parsley
- 1 teaspoon paprika

Balsamic Chicken

Liberally coat a large sauté pan with oil spray, and preheat the pan over medium-high heat
- 1 large yellow onion, thinly sliced
- 2 large red bell peppers, sliced
- 4 cloves garlic, minced (may substitute 1 teaspoon garlic powder)
- 1/4 teaspoon red pepper flakes (or to taste)
- 4 six-ounce pieces skinless, boneless chicken breast
- 1/4 teaspoon Kosher salt (or to taste)
- 1/4 teaspoon ground black pepper (or to taste)
- 1/3 cup balsamic vinegar (use a good-quality, aged variety if possible)
- 1 fifteen-ounce can diced tomatoes, well drained (preferably no salt added)
