Thai Seafood Firepot

Suzanne Cochrum's recipe
- 3 quarts regular-strength chicken broth
- 3 cups water
- 1 stalk (12") fresh lemon grass, sliced (or 1/4 cup sliced dried lemon grass, or yellow peel only from 1 large lemon)
- 1 to 2 fresh or pickled hot chilies (2 1/2" size), thinly sliced
- 1 strip (about 8") pared lime peel, green part only
- 18 clams suitable for steaming, scrubbed
- 1 1/4 pounds large shrimp (10-12 per pound) shelled and deveined
- 1 large cooked Dungeness crab (about 2 pounds), cleaned and cracked
- 2/3 cup lime juice
- 1/2 cup fresh coriander sprigs (cilantro)
- 3 green onions, cut into 1-inch lengths
- Lime wedges
Chicken and Napa Cabbage Salad

Whisk together lime juice, sesame oil and black pepper in large serving bowl
- 2 tablespoons fresh lime juice
- 2 teaspoons Asian (dark) sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 5 cups thinly sliced Napa cabbage
- 2 cups shredded, cooked skinless chicken breast
- 1 cup matchstick-cut carrots
- 1 green pepper, thinly sliced
- 2 scallions, thinly sliced on diagonal
Pear Crumble

Recipe by Jean Kressy Preheat oven to 375F
- Crumble:
- 2/3 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed brown
- /4 cup butter, chilled, cut into small pieces
- 1/3 cup chopped walnuts
- Filling:
- 6 cups firm, peeled pears, cut into small chunks (about 2 1/2 pounds)
- 1/3 cup apple cider or juice
- 1 tablespoon lemon juice
- 2 teaspoons all-purpose flour
- 1/4 cup orange marmalade

- 1/2 cup finely chopped celery
- 4 scallions, halved lengthwise
- 4 garlic cloves, halved lengthwise
- 3 dashes of Tabasco
- 3 bay leaves
- 2 sprigs rosemary
- 1 sprig flat-leaf parsley
- 1 sprig thyme
- 1 tablespoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1/4 teaspoon whole juniper berries
- 1 3-pound rabbit, cut into 8 pieces
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- All-purpose flour (for dredging)
- Boiled potatoes or cooked noodles
Spanish Garlic Chicken

Haven't tried this recipe yet, but it sounds good & easy to make
- 1 kg chicken thigh fillet
- 1 tablespoon paprika
- 2 tablespoons olive oil
- 8 garlic cloves, unpeeled
- 1/4 cup brandy
- 1/2 cup chicken stock
- 1 bay leaf
- 2 tablespoons chopped flat leaf parsley, fresh
Mulligatawny Soup I

Saute onions, celery, carrot, and butter in a large soup pot
- 1/2 cup chopped onion
- 2 stalks celery, chopped
- 1 carrot, diced
- 1/4 cup butter
- 1 1/2 tablespoons all-purpose flour
- 1 1/2 teaspoons curry powder
- 4 cups chicken broth
- 1/2 apple, cored and chopped
- 1/4 cup white rice
- 1 skinless, boneless chicken breast half - cut into cubes
- salt to taste
- ground black pepper to taste
- 1 pinch dried thyme
- 1/2 cup heavy cream, heated
Moroccan Chicken with Green Olives and Lemon

- 2 Meyer lemons or regular lemons
- 1 tablespoon olive oil
- 1 large onion, halved, thinly sliced
- 2 garlic cloves, pressed
- 1 tablespoon paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 2 cups low-salt chicken broth
- 1 4 1/2-pound chicken, cut into 8 pieces, skin removed
- 1/2 cup green olives
BBQ in a Jar

Instructions Combine first 7 ingredients in a small saucepan
- 1/2 cup sugar
- 1/2 cup apple cider vinegar
- 1/3 cup vegetable oil
- 1/2 tsp. mustard seeds
- 1/4 tsp. table salt
- 1/4 tsp. celery seeds
- 1/4 tsp. freshly ground black pepper
- 1 (16 oz.) package shredded coleslaw mix
- 1 (22 oz.) can baked beans in a sweet and smoky sauce
- 2 cups shredded barbecued pork without sauce (10 oz.)
- 9 Tbsp. bottled barbeque sauce
Latin Marinade

Combine all ingredients in a jar; shake well
- 1 cup black coffee
- 1/4 cup sour orange juice or vinegar
- 1/4 cup canola or olive oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 jalapeno, seeded and minced
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1 tablespoon chili powder
S'More Pie

- 1 1/4 cups fine graham cracker crumbs
- 1/4 cup sugar
- 6 tablespoons butter, melted
- 2 cups milk
- 2 egg yolks
- 1 - 3 or 3 1/4 oz. package vanilla pudding mix
- 1 cup tiny marshmallows
- 3 (3/4 oz each) milk chocolate candy bars, broken in pieces
- 2 egg whites
- 1/2 teaspoon vanilla
- 1/4 teaspoon cream of tartar
- 1/4 cup sugar
