Caramelized Onions

- 4 tablespoons of butter
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon smoked paprika
- 8 medium yellow onions thinly sliced
- 1/2 teaspoon salt
Syrah Braised Short Ribs

Short Ribs with Figs
- 2 lbs boneless beef short ribs, cut into 4 equal portions
- 2 cups flour
- Salt and black pepper - to taste
- 1/4 cup veg oil
- 1 yellow onion, coarsely chopped
- 3 ribs celery, coarsely chopped
- 2 carrots coarsely chopped
- 1/2 bottle (1-1/2 cups) Syrah or other red wine
- 1 bay leaf
- 1 thyme spring
- 3 cups beef broth or beef stock
- Mashed potatoes or polenta with gorgonzola cheese
- 8 fresh brown turkey figs or mission figs
- 6 tablespoons butter
Roasted Buffalo Shrimp

Twist on buffalo wings. Serve with cucumber spears, celery stalks and wedges of crunchy fennel
- 2 tablespns finely grated zest from two lemons
- 2 tablespns fresh lemon juice
- 2 garlic cloves
- 3/4 teaspns celery seeds
- 2 1/2 teaspns sweet paprika
- 1/4 teaspns cayenne pepper or more to taste coarse sea salt
- 2 tablespns honey
- 1/4 cup extra virgin olive oil
- 1 1/2 pounds large shrimp, peeled, deveined with tail intact
- 1 cup sour cream
- 1/4 cup pale green celery leaves, finely chopped
Pomegranate Glazed Carrots

- 1 cup POM Pomegranate juice
- 2 tbs honey
- 1 pound carrots, peeled and cut into 1 in diagonal slices
- 1 tbs EVOO
- 1/4 tsp each of sea salt and freshly ground pepper
- 1/2 cup Chopped walnuts
- 1/4 cup dried cranberries
- 1 tsp chopped fresh thyme
Wild Rice Soup

1. In a 3 qt sauce pan, melt butter over medium high heat
- 2 T butter
- 2 medium stalks of celery
- 1 medium carrot, coarsely shredded (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1 small bell pepper (any color) chopped (1/2 cup)
- 1/4 cup Bisquick
- 1/2 t salt
- 1/4 t pepper
- 1/4 t dried thyme leaves
- 1 cup water
- 1 can (10 1/2 oz) condensed chick broth
- 1 1/2 cups canned or frozen cooked wild rice
- 1 cup half and half
- 1/3 cup slivered almonds, toasted
- 1/4 cup chopped fresh parsley
Slow Cooker Sweet Potatoes with Applesauce

1. Place potatoes 3.5 qt slow cooker
- 6 medium (2 pounds) sweet potatoes or yams, peeled and cut into 1/2 inch cubes. Note - get darker skin potatoes - sweeter
- 1 1/2 cups applesauce
- 2/3 cups packed brown sugar
- 3 T's butter, melted
- 1 T ground cinnamon
- 1/2 cup chopped nuts, toasted
Pear-Cranberry Crisp

1. Heat oven 375. Spray 12x8 (2 quart) glass baking dish with cooking spray
- 5 cups sliced peeled pears (5 medium pears)
- 1 1/2 cups fresh or frozen cranberries
- 1 cup sugar
- 2 tbs all purpose flour
- 2 tsp grated orange peel
- 1 cup oats
- 1/2 cup packed brown sugar
- 1/3 cup all purpose flour
- 1/4 cup butter
- 1/2 cup chopped nuts
- Whipped cream, if desired
Smoked Salmon Asian Style

Asian Style
- 2 salmon fillets with skin
- 1 cup soy sauce
- 1/2 cup olive oil
- 8-10 cloves garlic, finely chopped
- 1 3 inch ginger piece, finely chopped
- 2 Tbs white sugar
- 1 lemon - quartered
Pan Fried Sand Dabs

1. Beat milk and egg in a bowl
- 1 egg beaten
- 1/4 cup milk
- 1 pound pan dressed sand dabs
- 1/2 cup flour seasoned with salt and pepper
- 1/2 cup bread crumbs
- 1/4 cup oil or clarified butter
- Lemon wedges
Casablanca Burger

1. In a large bowl combine all the ingredients up to the rolls
- 1 pound ground beef - 85% lean
- 1/3 cup finely snipped dried apricots
- 2 tablespoon pine nuts, toasted
- 2 tablespoon chopped cilantro - fresh
- 2 gloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp ground coriander
- 1/4 tsp ground black pepper
- 4 Kaiser rolls
- 1 recipe Moroccan ketchup
- 4 leaves red leaf lettuce
- 1 medium tomato, sliced
