Bread Stuffing - Betty Crocker

1. melt butter in a 4 quart Dutch oven over medium heat
- 3/4 cup butter
- 2 large celery stalks, chopped
- 1 medium onion, chopped (1/2 cup)
- 9 cups soft bread cubes (15 bread slices)
- 1 1/2 teaspoons chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon ground sage
- 1/4 teaspoon pepper
Cheddar and Olive Balls

Jenee's fav to add a little spice you can add 1/8 teaspoon of cayenne
- 1/4 lb. extra sharp cheddar cheese, shredded
- 1/4 cup buttter, softened
- 1/2 teaspoon paprika
- 1/8 teaspoon salt
- 3/4 cup all purpose flour
- 24 - 30 medium pitted green olives
Rosemary Oil

1. In a large bowl, combine flour, cheese and rosemary
- 2 cups self rising flour
- 1/2 cup shredded sharp cheddar cheese
- 1 tablespoon minced fresh rosemary or 1 tsp dried rosemary, crushed.
- 1 1/4 cup milk 2%
- 3 Tbsp mayonnaise
Tenderloin Roast - Center Cut

1. Heat oven to 250 2 Combine salt, pepper, cumin in a small dish
- 1 1/2 tsp kosher salt
- 1 1/2 tsp freshly ground pepper
- 1 tsp fresh ground cumin
- 1 to 1 1/4 pound tenderloin roast cut from the center of the whole tenderloin

Grilled London Broil
- A. Meat
- 2-3 pounds London Broil
- 2 teaspoons sea salt
- 2 tablespoons minced fresh rosemary
- B. Marinade
- 6 tablespoons olive oil
- 6 cloves garlic, minced
- 1 shallot, minced
- C. Balsamic Vinegar glaze
- 3/4 cup Mission Fig Balsamic
- 1 tablespoon butter
Ahi Tuna - Mediteranean Style - Grilled

1. Pat dry tuna steaks 2. Mix all spices with oil and lemon juice in a small bowl using a fork or wisk
- 4 - 5 oz (fresh or frozen) 1 inch thick Ahi Tuna Steaks
- 1 T extra Virgin Olive oil
- 1/2 t sea salt
- 1/2 t lemon juice (fresh lemon)
- 1/4 t cracked black pepper
- 1/2 t finely chopped oregano or 1/4 t dried
- 1/4 t red pepper flakes or dash crushed dried
- 1 t finely chopped basil or 1/4 t dried
- 1 clove minced garlic
Wild Rice Pilaf with Mushrooms and Pecans

Great rice recipe. Make enough for 4 - 6 Preference: toast pecans separately
- 3 oz. wild rice (about 1/2 cup)
- 1/2 pound orzo pasta
- 2 tablespoon butter
- 1/2 pound cremini mushrooms sliced
- 1/2 cup pecans, chopped
- 2 tablespoon chopped fresh sage
- 1 cup frozen peas, thawed
- Half of a 15.5 ounce can chickpeas, drained

1. Heat oven 375 2. Line baking sheet with parchment paper and set aside 3
- 1 3/4 cups all purpose flour
- 1/4 cup whole wheat flour
- 2 tsp baking powder
- 1 tsp sugar
- 1/2 tsp baking soda

- 1/2 cup shredded sharp cheddar cheese
