Requires 3 hours to marinate
- 1/4 cup EVOO
- 1/3 cup balsamic vinegar
- 1 T brown sugar
- 1 T Dijon mustard
- 1/2 t minced garlic
- 1/2 t pepper
- 3/4 pound flank steak
- Spring mix salad
- 1 plum tomato, cut into wedges
- 1/4 cup radishes
- 1/4 cup chopped celery
- 2 green onions, cut into 1 inch strips

- 1/2 teaspoon ground nutmeg, divided
- 1/4 teaspoon salt
- 1 pound pork tenderloin. - fat and silver skin removed
- 1/4 cup apricot all-fruit spread
- 3 tablespoons O.J.
- 1 tablespoon olive oil

Chicken Kabobs - Mexicana Style

1. In a shallow dish mix EVOO and cumin, chopped cilantro and lime juice
- 2 Tbs EVOO
- 1 tsp cumin
- 2 tbs chopped fresh cilantro
