Boar Stew

Wild Boar Stew - with Paul Lerner St Laurent Mittelbugenland - Pinot Noir
- 1 pound wild boar meat, cubed
- 1/2 pound bacon, diced
- 2 tablespoons canola oil
- 2 medium onions, diced
- 4 cloves garlic, minced
- Salt and Pepper
- 1/2 teaspoon thyme
- 1 teaspoon caraway seeds
- 1 cup buttermilk
- 2 cups chicken stock
- 3 cups Pinot Noir or St Laurent
- 3 pounds portobello mushrooms, sliced
- 1 bay leaf

1. Preheat to 450. 2. In a large bowl mix flour, sugar, baking powder and salt
- 3 cups flour
- 2 T's sugar
- 4 t's baking powder
- 1.5 t's salt
- 1/2 cup shortening

- Rub:
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon fresh ground black pepper
- 2 teaspoons onion powder
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Tri-tip:
- two (2) two pound or three pound roasts
Chocolate Ganache

- 8 ounces good semisweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon instant coffee granules
- Cook the chocolate chips, heavy cream and instant coffee in the top of a double boiler over simmering water until smooth and warm; stirring occassionally.

- Kosher salt and coarsely ground black pepper
- 2 2 2 tablespoons vegetable oil
- 1 1 1 handful fresh thyme sprigs
- 1 1 1 handful fresh rosemary sprigs
- 2 2 2 shallots, finely chopped
- 1/2 1/2 1/2 cup Cognac or brandy
- 1/2 1/2 1/2 cup demi-glace or dark stock
- 1/4 1/4 1/4 cup heavy cream
- 1 1 1 tablespoon Dijon mustard
- 2 2 2 tablespoons jarred green peppercorns, drained
- 1/4 1/4 1/4 cup chopped fresh flat-leaf parsley
- 1 1 1 bunch watercress, stems trimmed

- Directions
- to 400 oven to 400 degrees F.
- to 20 to 25 rosemary on top of the tenderloin and transfer the whole thing to the oven; roast for 20 to 25 minutes for medium-rare.

- To 1/2-inch pile the watercress on a serving platter, cut the tenderloin into 1/2-inch thick slices and arrange it on top of the greens. Drizzle the sauce over the beef and garnish with chopped parsley. Serve the steak au poivre with pommes frites.

1. Heat the oil - 3 tablespoons in a large non-stick skillet over medium-high heat
- 1/4 cup + 1 tsp olive oil
- 3 russet potatoes, cut into 1 inch pieces.
- Coarse salt
- 2 onions, sliced into rings
- 1/4 tsp pimenton or smoked paprika
- 2 tablespoons chopped fresh flat leaf parsley
Hot Bacon and Pasta Salad

1. Fill a 3 quart sauce pan 2/3 full of water and heat to a boil
- 1 box (7.75 oz Betty Crocker Suddenly Salad classic salad mix
- 4 slices of bacon, cut into 1 inch pieces
- 1/4 cup sliced onion
- 3 tablespns balsamic vinegar
- 1 tablespn packed brown sugar
- 1 tablespn olive oil
- 1/4 teaspn Dijon mustard
- 4 cups baby spinach
- 1 pear, cut into bite size pieces
- 4 oz blue cheese, crumbled (1 cup)
Sweet and Tangy Pulled Pork

1. Cut pork roast in half and place in a 4-5 quart slow cooker
- 1 boneless pork shoulder butt roast - 3 to 4 pds)
- 1 jar (18 oz) apricot preserve
- 1 large onion - chopped
- 2 tbs reduced sodium soy sauce or substitute 1/4 cup chicken broth.
- 2 tbs dijon mustard
- Hamburger buns
