Low calorie Chicken Chilaquiles but hearty and filling
- Cooking spray
- 1 cup thinly sliced onion
- 5 garlic cloves, minced
- 2 cups shredded cooked chicken breast
- 1 (15oz) can black beans, rinsed and drained
- 1 cup fat free, less sodium chicken broth
- 1 (7 3/4 oz) can salsa de chile fresco
- 15 (6 inch) corn tortillas, cut into 1 inch strips
- 1 cup (4 oz) shredded queso blanco
Chicken and Black Bean Enchiladas

1. Cut chicken into short, thin strips
- 3/4 lb skinless, boneless chicken breast
- 3 slices bacon
- 2 cloves garlic, minced
- 1 1/2 cups picante sauce
- 1 16 oz can black beans, undrained
- 1 red bell pepper, chopped
- 1 tsp ground cumin
- 1/4 tsp salt
- 1/2 cup sliced green onions
- 12 flour tortillas (6-7 inch)
- 1 1/2 cups (6 oz) shredded Monterey Jack cheese
- Toppings: shredded lettuce, choppd tomato, sour cream, avocado slices
Spicy Goulash

Jazz up an ordinary Goulash
- 1 lb ground beef
- 4 cans (14 1/2 oz each) Mexican diced tomatoes, undrained
- 2 cans (16 oz each) kidney beans, rinsed and drained
- 2 cups water
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1/4 cup red wine vinegar
- 2 TBSPs chili powder
- 1 TBSP Worcestershire sauce
- 2 tsps beef bouillon granules
- 1 tsp each dried basil, dried parsley flakes and ground cumin
- 1/4 tsp pepper
- 2 cups uncooked elbow macaroni
Beef, Cheese, and Noodle Bake

- 1 (8 oz) package small elbow macaroni
- Cooking spray
- 1 cup chopped onion
- 1 cup shredded carrot
- 2 tsps bottled minced garlic
- 1 lb lean ground sirloin
- 1 cup tomato sauce
- 1 tsp kosher salt, divided
- 1/2 tsp freshly ground black pepper
- 1 cup fat free milk
- 2 TBSPs all purpose flour
- 1/8 tsp ground nutmeg
- 1 1/2 cups (6oz) 2% reduced fat shredded sharp cheddar cheese divided
Richard's Mom's Vegetable Soup

Combine all and simmer for an hour
- 5 cans Swanson Chicken Soup
- 1 can Tomato Soup
- 1 Can V-8
- 5-6 Potatoes
- 1 lb Macaroni or other Noodles cooked (add or lessen according to taste)
- 2 cups cooked rice
- 1 large package carrots diced
- 1 head of celery diced
- 1/2 head of cabbage
- 2 cans of beets

- Strawberry Apple Salsa
- 1 cup fresh strawberries
- 2 medium apples
- 1/2 cup mandarin oranges, drained well
- 1/4 cup fresh pineapple or unsweetened canned pineapple
- 1-2 TBSP splenda to taste
- 2 TBSP sugar free strawberry jam
- Melon Berry Salsa
- 1 cup cantaloupe or honey dew melon
- 1 cup frozen berry mix consisting of strawberries, blueberries, blackberries, and raspberries, thawed and very well drained
- 1/4 cup sugar or Splenda
- 2 TBSP lime juice
- Chopped fresh mint (optional)
- Cinnamon Dippers
- 4 large 10 inch tortillas
- 1 TBSP Splenda or Sugar
- 2 tsp Cinnamon
