Chicken Spaghetti Casserole

Makes two casseroles. One to eat, another to freeze before baking
- 2 cups chopped cooked chicken breast
- 2 cups uncooked spaghetti noodles, broken into 2 inch pieces (7 oz)
- 1 cup (1/4 inch thick) slices celery
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 1 cup fat free, less sodium chicken broth
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 (10.75 oz) cans condensed 30% reduced sodium 98% fat free cream of mushroom soup, undiluted
- Cooking Spray
- 1 cup (4 oz) shredded cheddar cheese, divided

- 1 envelope lipton recipe secrets onion soup mix
- 2 lbs ground beef
- 1/2 cup water
- Can use Beefy onion, onion-mushroom, italian herb with tomato, savory herb with garlic, or fiesta herb with red pepper soup mixes.
Baked Chicken and Ziti

- 1/2 lb skinless boneless chicken breasts, cut into 1/4 inch strips
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 28 oz can crushed tomatoes ( no salt added)
- 1 tsp Italian herb seasoning
- 1/4 tsp freshly ground black pepper
- 2 cups ziti or penne
- 2/3 cup nonfat ricotta cheese
- 1/3 cup shredded part-skim mozzarella cheese
- 2 TBSPs grated Parmesan Cheese

- 3/4 lb boneless beef sirloin steak
- 1 TBSP vegetable oil
- 1 clove garlic, minced
- 1 med onion, cut into wedges
- 1 can Campbells Cream of Broccoli Soup
- 1/4 cup water
- 1 TBSP soy sauce
- 2 cups broccoli flowerets
- Hot cooked egg noodles
Zucchini Pizza Casserole

- 4 cups shredded unpeeled zucchini
- 1/2 tsp salt
- 2 eggs
- 1/2 cup grated parmesan cheese
- 1 cup (4 oz shredded cheddar cheese, divided)
- 2 cups (8 oz0 shredded part-skim mozzarella cheese, divided)
- 1 lb ground beef (lean at least 80%)
- 1/2 cup chopped onion
- 1 can (15 oz) Italian tomato sauce or 1 can (15 oz) tomato sauce with 1/4 tsp oregano, 1/4 tsp basil
- 1 Medium green pepper, chopped
