Fluffy Meatloaf

Very good and holds together well
- 1 1/2 lb. ground beef
- 3 medium slices soft bread, torn in pieces, and 1 c. milk or 1 c. dry bread crumbs and 1 1/4 c, milk
- 1 egg, beaten
- 3/4 c. minced onion
- 1 tbsp catsup
- 1 tbsp horse-radish
- 1 tsp salt
- 1/4 tsp pepper
- 1 tbsp Worcestershire sauce
Chicken Enchilada Lasagna

This takes a little preparation time but oh- so- good!
- 12 uncooked lasagna noodles (12 oz pkg)
- 2 cans (10 oz each) Old El Paso Enchilada sauce.
- 1 can (4.5 oz) chopped green chiles
- 1 medium tomato, chopped
- 2 c. diced cooked chicken
- 1 c. shredded Monterey Jack cheese with jalapeno peppers (4 oz)
- 8 medium green onions, chopped
- 1 c. sour cream
- 1 c. shredded Cheddar cheese (4oz)
- Additional sour cream if desired
- Shredded lettuce if desired
Chicken Tenderloin Orange Rice Medley

In large skillet, sauté chicken sprinkled with ginger in 2 tbsp
- 1 pound boneless, skinless tenderloins, thawed
- 1/2 tsp ground ginger
- 2 tbsp. oil
- 2 tbsp. butter
- 1/2 c. diced celery
- 1 can sliced water chestnuts, drained
- 1 c. Mandarin oranges, drained
- 2 c. cooked rice
- 1/4 c. sliced almonds
- 1/4 tsp salt
Egg Biscuits

Sift together flour, sugar, baking pwd, salt and cream of tartar
- 3 c. flour
- 1/8 c.sugar (2 tbsp)
- 2 tbsp baking pwd
- 3/4 tsp salt
- 3/4 tsp cream of tarter
- 3/4 c. butter or margarine
- 3/4 c. milk
- 1 egg lightly beaten
Frog Eye Salad

- 3/4 c. sugar
- 1 tbsp flour
- 1/2 tsp salt
- 2/3 c. pineapple juice
- 1 egg beaten
- 1 tsp lemon juice
- 1 c. Acini Di Pepe
- 2 cans {11 oz each) mandarin oranges, drained
- 1 can (20 oz) chunk pineapple, drained
- 1 can (20 oz) crushed pineapple, drained
- 1 carton ( 8 oz) dairy whipped topping
- 1 c. miniature marshmallows
Curley Chicken Noodle Soup

Very good. Takes a little time
- 1 # boneless, skinless chicken breasts, cut into 1/2" pieces
- 1 large onion, chopped
- 4 celery ribs, sliced
- 2 medium carrots, sliced
- 2 garlic cloves, minced
- 2 tbsp butter or margarine
- 2 tbsp canola or olive oil
- 1/4 c. flour
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/8 tsp pepper
- 3 cans (14 1/2 oz each) chicken broth
- 1 can (14 1/2oz) diced tomatoes, undrained
- 6 ounces ( 1 1/4 c.) uncooked spiral pasta
Deep-Dish Pizza Recipe

In a large bowl, dissolve yeast in warm water
- 1 package (1/4 ounce) active dry yeast
- 1 cup warm water (110° to 115°)
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons canola oil
- 2-1/2 cups all-purpose flour
- 1 pound ground beef, cooked and drained
- 1 can (10-3/4 ounces) condensed tomato soup, undiluted
- 1 teaspoon each dried basil, oregano and thyme
- 1 teaspoon dried rosemary, crushed
- 1/4 teaspoon garlic powder
- 1 small green pepper, julienned
- 1 can (8 ounces) mushroom stems and pieces, drained
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
