Pork rib marinade

Mix ingredients together. Marinate ribs at least 2 hours
- •1/2 cup olive oil
- • 3 tablespoons brown sugar
- • 1/4 cup vinegar
- • 1/4 cup scallions, diced fine
- • 1 tablespoon cayene pepper
- • 1 tablespoon chili powder
- • 2 pounds pork ribs
Luciana's Columbian Friend's San Cocho Recipe

Add chicken to 3/4 full pot of cold water
- 1 whole chicken
- 2 garlic cloves, minced
- 1 tsp garlic salt
- 1 pack chicken bouillon
- 2 tsp Sazon Goya
- 3 medium potatos, chopped
- 2 ears corn cut in 2-3 pieces each
- 8 " cut up Yucha or Casanova
- 2 Plantains rip little pieces, fingernail size
- lots of cilentro
- 2 green onions, chopped
- 2 medium tomatos, chopped
- 3/4 pot of cold water
Linguine with Pancetta, Olive oil, Chili, Clams and White wine sauce

- 1 lb dried good quality linguine
- olive oil
- 4 rashers pancetta, sliced thinly or dry-cured smoked bacon
- 1 large garlic clove, finely chopped
- 1 dried red chili, crumbled
- 1 1/2 lbs clams (or scallops/prawns)
- 2 x 5 oz white wine (or zinfandel)
- handful chopped parsley leaves
- salt and freshly ground pepper
Seared Sea Scallops over Angel Hair Pasta

- 1/3 cup butter
- Coarse salt and freshly cracked pepper
- 3/4 lb large sea scallops
- 2 cloves garlic, minced
- juice of half a lemon
- pinch saffron
- 1 cup peas
- 1 tbsp grated lemon zest
- 1 tsp freshly cracked pink peppercorns.
- Assembly
- 1 tbsp chopped fresh chives
- 1/4 cup chopped fresh parsley
- Garlic chives for garnish
CROCK POT CHILI

Soak pinto beans overnight in water to cover
- 2 (16) oz cans kidney beans, drained
- 2 (14) oz cans tomatoes, cut up
- 2 lbs ground beef, browned and drained
- 1 large onion
- 1 green pepper
- 1 red pepper
- 2 tablespoons minced garlic
- 3 tablespoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 6 oz jar sliced jalapenos (with juice)
- 2 teaspoons Tabasco
- 8 oz mushrooms
- 1 12 oz can of sliced olives
- 2 hand fulls raw pinto beans
Noodles with Creamy Leek and Mushroom Sauce

1- Cook the noodles until tender in boiling salted water
- 3- 3.5 oz (85-100g) wholemeal (whole wheat) noodles
- 1 small leek
- 1 1/2 tbsp vegan margarine
- 4 oz (115 g) mushrooms 2 cups
- 1 1/2 tbsp wholemeal flour
- 1/8 pint (70 mls) soy milk 1/3 cup
- 1/2 tsp mustard
- 1/2 tsp marjoram
- sea salt and pepper to taste
Spaghetti Ticino

1- Cook the spaghetti until just tender
- 3 oz (85g) wholewheat spaghetti 1/2 cup
- 1 small onion
- 1 small garlic clove
- 1 small green pepper
- 1 tbsp olive oil
- 2 oz (55g) mushrooms 1 cup
- 1 tbsp wholewheat flour
- 1/4 pint (140 ml) soya milk 2/3 cup
- sea salt and pepper to taste
- 1 tsp vegan margarine
- 1 tbsp nutritional yeast flakes or powder or vegan parmesan
- 2 tbsp Smokey Snaps (imitation bacon bits)
Classic Chicken Stew (Crockpot)

1. In a saucepan, combine potato and cold water to cover
- 1 potato, peeled and diced (see Tips, below)
- 1 tbsp/15 mL vegetable oil
- 2 onions, finely chopped
- 4 stalks celery, diced
- 2 carrots, peeled and diced
- 1/2 tsp/2 mL dried thyme leaves or 3 whole sprigs of fresh thyme
- 1 bay leaf
- 1/4 cup/50 mL all-purpose flour
- 1-1/2 cups/375 mL chicken stock
- 1/2 cup/125 mL dry white wine or chicken stock
- Salt and freshly ground pepper
- 3 lbs/1.5 kg skinless, bone-in chicken thighs (about 12 thighs)
- 1 cup/250 mL green peas, thawed if frozen
- 1/2 cup/125 mL cream, optional (see Tips, below)
Marinated Spinach

1. Parboil spinach in lightly salted water for about 30 seconds, rinse in cold water
- 1 bunch spinach
- Dashi:1/3 tsp “HON-DASHI"
- 3/4 cup hot water
- 2 Tbsp light soy sauce
- Grated daikon
- Bonito flakes (Optional)
