Homemade Granola Bars

Preheat your oven to 325 degrees F
- 2 cups old-fashioned oatmeal
- 1 cup shredded coconut, loosely packed
- 1/4 cup flax seeds
- 3 tablespoons unsalted butter
- 2/3 cup honey
- 1/4 cup dark brown sugar, lightly packed
- 1-1/2 tsp. pure vanilla extract
- 1/4 tsp. kosher salt
- 1 cup dried fruit, chopped (apricots, dates, cranberries, blueberries, raisins, etc.)
Steak and Onion Tacos with Fresh Tomato Salsa

Heat the oil in a large skillet over medium heat
- 2 tablespoon(s) olive oil
- 1 onion, sliced
- 1 teaspoon(s) ground cumin
- 1/2 teaspoon(s) chipotle chili powder
- Kosher salt
- 1 pound(s) sirloin steak, cut into thin 1-inch-long strips
Mellow Yellow

Place all ingredients except garnish in a blender and combine until smooth
- 3 ounces rum
- 1 ounce orange liqueur
- 1 ounce fresh lemon juice
- 1 teaspoon sugar
- 2 cups crushed ice
- 6 1-inch cubes of ripe cantaloupe
- Lemon slice or rind for garnish
Pan-Fried Honey-Lemon Fingerling Potatoes and Leeks

Bring a pot of salted water to a boil
- Salt
- 2 pounds fingerling potatoes
- 2 tablespoons butter
- 1 leek, halved, thoroughly washed and then sliced up to pale green part
- Freshly cracked black pepper
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 tablespoon minced fresh Italian parsley
- 1 lemon, zested
Strawberry Sauce

In a small bowl, stir the honey and boiling water together until the honey is dissolved
- 1 Tb. honey
- 1 Tb. boiling water
- 4 ounces strawberries (6-7 large) thawed, with juice, if frozen
Chocolate Chip Cake with Classic Chocolate Buttercream

Position a rack in the middle of the oven and preheat to 350 degrees F
- 1 c. unsalted butter
- 1.25 c. unbleached all-purpose flour
- 1 c. whole milk
- 1 tsp. pure vanilla extract
- 1.75 c. cake flour
- 1 tbsp. baking powder
- 0.75 tsp. Fine sea salt
- 1.50 c. granulated sugar
- 0.50 c. packed light brown sugar
- 4 large eggs
- 1 c. semisweet chocolate chips
Best Brat Bath

Makes 4 servings
- 4-6 brats (I recommend the Old Heidelberg Bakery, 2210 E. Indian School Road, Phoenix.)
- 1 quart of Miller "High Life" or regular Bud
- 1 cup water
- 5 medium-size fresh garlic cloves, smashed
- 1/2 small onion, peeled and thinly sliced
- 1 tablespoon whole-grain mustard
- 1 tablespoon cider vinegar
Frozen Ravioli Wonton Soup

In a medium pot, heat the olive oil over medium heat, add the garlic and ginger and cook for 1 minute
- 2 tablespoons olive oil
- 1 tablespoon finely chopped garlic (about 2 cloves)
- 1 tablespoon finely chopped ginger (can also be finely grated with a rasp grater)
- One 32-ounce box low-sodium chicken broth
- 2 tablespoons soy sauce
- One 9-ounce package frozen meat ravioli
- 1 cup packed baby spinach leaves, roughly chopped
- 1/4 cup thinly sliced scallions (about 2 stalks)
Brown Sugar Spiced Salmon

- 1/2 cup dark brown sugar
- 1 tablespoon chile powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Four 8-ounce salmon fillets
Queso Fundido with Chorizo, Peppers and Onions

Preheat oven to 350 degrees
- 4 Tbs. olive oil
- 6 oz. fresh Mexican chorizo sausage, about 2 links (or hot Italian pork sausage)
- 2 Tbs. flour
- 1 cup whole milk
- 1/4 tsp. ground cumin
- 1/8 tsp. ground nutmeg
- Kosher salt and freshly ground black pepper, to taste
- 2 cups shredded Monterey Jack cheese blend
- 1 large sourdough baguette, cut in1/4-inch slices on a bias
- 1/2 medium Vidalia onion, sliced
- 1 medium red pepper, sliced
- 2 green onions, chopped plus extra for garnish
