Blueberry Pie Filling

combine blueberries, 1/2 cup sugar, 5 Tbs
- 6 1/2 cups fresh blueberries
- 1/2 cup plus 1 tsp. sugar, divided
- 5 Tbs. plus 1 tsp. tapioca starch, divided
- 1 tsp. grated lemon zest
- 1/8 tsp. fresh grated ginger
- 1/8 tsp. kosher salt
Lentil Soup with Plantains

Cut 1 onion into chunks and the other into dice
- 2 large onions
- 10 cloves garlic
- 2 cinnamon sticks
- 6 whole cloves
- 1 bunch fresh thyme or 1 tablespoon dried thyme
- 1 gallon vegetable stock
- 3 cups lentils, washed and picked over
- 6 tablespoons extra virgin olive oil or unsalted butter
- 2 ripe (black) plantains, peeled, cut in half, and diced
- 3 medium carrots, peeled, cut into quarters lengthwise, and sliced into 1/2-inch pieces
- 1 tablespoon salt
- 1/4 teaspoon ground allspice
- 1 1/2 bunches cilantro, chopped

- 15 heat for 15 minutes. Taste again for seasoning. Use everywhere!

- 8 ounces haricot vert, trimmed and cut in half
- 1 pint grape tomatoes
- 1/3 cup kalamata olives, pitted and coarsely chopped
- 2 tablespoons capers, drained and coarsely chopped
- 1 red onion, cut into chunks
- Kosher salt and freshly ground black pepper
- Shrimp:
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
