Balsamic Chicken Breast

Rinse the chicken and pat dry
- 4 boneless chicken breasts, split
- Salt and freshly ground pepper
- 2 tablespoons flour
- 2 tablespoons olive oil, or 1 tablespoon olive oil and 1 tablespoon unsalted butter
- 3 cloves garlic, minced
- 8 ounces fresh porcini mushrooms, sliced
- 1/4 cup balsamic vinegar
- 3/4 cup chicken broth
- 3 tablespoons white wine

Banana Chip Bars

Mix flour, oats, baking powder, baking soda, cinnamon and salt; set aside
- 1 cup all-purpose flour
- 1/2 cup quick-cooking rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 cup margarine, softened
- 1 egg
- 1/2 tsp vanilla
- 1 cup mashed ripe banana
- 1/2 cup SPLENDA® No Calorie Sweetener, Granulated
- 1/3 cup semi-sweet chocolate chips
- 1/4 tsp salt
Vinegar Based BBQ Sauce

In a small bowl, combine all ingredients and allow ingredients to mesh for about 4 to 8 hours before using
- 1 cup cider vinegar
- 1 tbsp salt
- 1/2 tsp cayenne pepper
- 1 tsp crushed red pepper flakes

Roasted Potato and Garlic Soup

- 4 medium potatoes
- 1 large onion, coarsely chopped
- 2 tsp fresh rosemary or 1 tsp. dried, crushed
- 1 bulb garlic
- 1 tbsp olive oil
- 1 14 1/2 can chicken broth
- 1 tbsp flour
- 1/4 tsp pepper
- 1 cup half and half or light cream
- 1 recipe homemade croutons

Strawberry Banana Muffins

- 1/2 cup (1 stick) (113 grams) unsalted butter, melted
- 2 large eggs, lightly beaten
- 1 teaspoon (4 grams) pure vanilla extract
- 2 large ripe bananas, mashed (about 1 cup)
- 1 cup (240 ml) fresh strawberries (cut into bite sized pieces)
- 2 1/4 cups (295 grams) all-purpose flour
- 3/4 cup (160 grams) light brown sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon (4 grams) ground cinnamon

- 2 tsp butter
- 1/2 cup icing sugar
- 1/4 tsp vanilla
- 1 1/2 tsp water
French Vanilla Ice Cream

- 2 1/2 cups half-and-half
- 8 egg yolks
- 1 cup sugar/Splenda
- 2 1/2 cups whipping cream

- 2 cups uncooked medium shell pasta
- 1-1/2 cups imitation crabmeat, chopped
- 1 cup fresh broccoli florets
- 1/2 cup diced green pepper
- 1/2 cup quartered cherry tomatoes
- 1/4 cup chopped green onions
- 1/2 cup mayonnaise
- 1/4 cup creamy Italian salad dressing
- 1/4 cup grated Parmesan cheese
Ginger Beef Stir-Fry Recipe

- 2 tablespoons water
- 1/4 teaspoon salt
- 1-1/2 pounds beef top sirloin steak, thinly sliced into 3-inch strips
- 2 tablespoons vegetable oil, divided
- 3/4 cup thinly sliced carrots
- 3/4 cup beef broth
- 2 tablespoons soy sauce
- 2 teaspoons grated orange peel
- 1 teaspoon ground ginger
