Place vinegar in a sm. heavy saucepan; bring to a boil over med-heat
- 3 Tbsp. Balsamic Vinegar
- 41/2 C. Fat-Free, Low-Sodium Chicken Broth
- 2 Tbsp. Extra-Virgin Olive Oil, divided
- 2 C. Leeks, chopped
- 11/2 C. Uncooked Arborio Rice
- 1/3 C. Dry White Wine
- 1/4 C. Half & Half
- 1 tsp. Salt
- 1/4 tsp. Freshly Ground Black Pepper
- 1 C. Halved Grape Tomatoes
- 1/4 C. Chopped Fresh Basil
- 5 oz. Fresh Mozzarella Cheese, finely diced
Soft Polenta

- 1 C. Cold Water or Chicken Broth

- 8 oz. ( 250 g ) Mixed Fresh-Wild Mushrooms

- 4 Tbsp. Butter, divided
- 1 tsp. Chopped Garlic
- 2 Tbsp. Italian Flat Leaf Parsley, chopped
- Salt & Freshly Ground Black Pepper
- 5 C. ( approx. ) Chicken Stock
- 1/2 C. Onion, finely chopped
- 11/2 C. Arborio Rice
- 1/2 C. White Wine
- 1/3 C. Grated Parmesan Cheese
