Roasted Red Pepper & Tomato Soup

Preheat oven to 375. Cut the tops from the red peppers & discard the seeds & inner membranes
- 3 Red Peppers
- 2 Tbsp. Extra-Virgin Olive Oil
- 3 Cloves Garlic, thinly sliced
- 1 C. Sweet Onion, diced
- 1 Tbsp. Fresh Rosemary, chopped
- 1 28 oz. Can Whole Tomatoes w/ Juices
- 1 C. Water or Vegetable Stock
- 1 tsp. Maldon Sea Salt
- 1 tsp. Granulated Sugar

- 2 Tbsp olive oil
- 3 shallots, chopped
- 2 large garlic cloves, chopped
- 1/2 pound sweet Italian sausage, casings removed
- 1/2 pound spicy or hot Italian sausage, casings removed
- 1 cup whipping cream
- 2 14.5-ounce cans diced tomatoes in juice
- 1 Tbsp dried sage
- 3/4 pound fettuccine
- 1/2 cup grated Parmesan cheese
