Polenta With Old Cheddar Topped With Carmelized Shallots & Mushrooms

Butter a loaf pan. In a saucepan, heat stock to boiling, add thyme & pepper to taste
- 1 C. Chicken Or Vegetable Stock
- 1/2 tsp. Fresh Thyme
- 3 Tbsp. Cornmeal (Polenta)
- 1 //2 C. Shredded Old Cheddar
- 3 Tbsp. Butter
- 3 Shallots, quartered
- 3 C. Small White Mushrooms, halved
- 11/2 Tbsp. Maple Syrup, honey or brown sugar
- 1/4 C. Red Wine
- 2 Tbsp. Balsamic Vinegar
- Salt & Freshly Ground Black Pepper
- Butter For Pan
Zucchini-Walnut Lasagna

An excellent alternative to traditional lasagna
- 2 Med. Zucchini
- 4 tsp. Olive Oil
- 2 Lg. Onions, cut into wedges
- 2 Lg. Carrots, sliced
- 4 Garlic Cloves
- 2 C. Marinara Sauce
- 1 Tbsp. Snipped Fresh Basil
- 1/8 tsp. Freshly Ground Black Pepper
- 11/2 C. Shredded Mozzarella Cheese
- 1/2 C. Grated Parmesan Cheese
- 9 No-Boil Lasagna Noodles
- 1/2 C. Chopped Walnuts, toasted, plus additional toasted chopped walnuts

- 1/2 C. Eggnog
- 1 T-Disk Tassimo Nabob Espresso
Beef Satay

- 1 Tbsp. Cracked Black Peppercorns
- Kosher Salt
- 1/4 C. Red Wine
- 6 Tbsp. Dijon Mustard
- 2 Tbsp. Soy Sauce
- 3/4 tsp. Fresh Thyme, chopped or 1/4 tsp. Dried Thyme Leaves
- 2 Tbsp. Minced Garlic
- 1/2 C. plus 2 Tbsp. Canola Oil
- 1 lb. Hanger Steak, trimmed & sliced across the grain into 1/4" thick slices
- 20 (6-8") Bamboo Skewers, soaked in water for 30 min.

- 16 Sm. New Potatoes, halved
- 4 Garlic Cloves, minced
- 2 Sprigs Rosemary
- 3 Tbsp. Olive Oil

- 2 Tbsp. Maple Syrup

- 1/2 lb. Feta Cheese, crumbled
- 1/2 C. Sun-Dried Tomatoes In Oil, drained & finely chopped

- 1/4 C. Oregano, finely chopped

- 2 Heads Fennel, sliced thin & roasted
- 4 Tbsp. Extra Virgin Olive Oil
- 5 Cloves Black Garlic, sliced
- 1 Jar Tomato & Basil Sauce
- Salt & Freshly Ground Black Pepper To Taste
- 1/4 C. Parmegiano-Reggiano Cheese, grated
Orecchiette With Herbed Garlic Tomatoes

Bring a lg. pot of water to a boil
- 1/2 of a 500g Pkg. (2 C. ) Orecchiette Pasta
- 1 Sm. Orange
- 2 Garlic Cloves, minced
- Olive Oil
- 1 Pint Grape Tomatoes ( Preferably Orange or Yellow )
- Salt & Freshly Ground Black Pepper
- 4 C. Arugula
- 1/2 C. Fresh Basil or Snipped Fresh Chives, chopped
Mushroom Pilaf

- 1 Pkg. ( 14g ) Dried Mushrooms ( such as porcini or morel )
- 2 Tbsp. Vegetable Oil
- 2 Garlic Cloves
- 1 Leek ( white & light green parts only ), finely chopped
- 1 C. Diced Carrots
- 1 tsp. Dried Thyme
- 11/3 C. Brown Basmati Rice
- 2/3 C. Wild Rice
- 1/2 tsp. each Salt & Freshly Ground Black Pepper
- 11/2 C. each Sodium-Reduced Chicken Stock & Water
- 1/4 C. Fresh Parsley, chopped
- 1/4 C. Sweet Red Pepper, finely diced
