Cherry-Nut Easter Eggs

Directions Cut cherries in half, and drain well on paper towels
- 1/2 C. milk
- 1/2 stick butter or margarine
- 2 3 oz. pkg. vanilla pudding and filling (not instant)
- 1 9 oz. jar maraschino cherries
- 1 C. finely chopped pecans or walnuts
- 1-2 lb. confectioners' sugar
- 1 lb. chocolate; melted
3-Minute Oatmeal Raisin Cookie

Combine all ingredients in a microwave-safe bowl
- Serves 1
- 1/4 cup oats
- 1/8 cup liquid egg whites
- 2 teaspoons brown sugar
- 2 teaspoons all-purpose flour
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1 tablespoon raisins
- Cinnamon to taste

1. In a large stockpot, heat the olive oil over medium heat
- 1/4 cup olive oil
- 2 medium chopped leeks (white and light green parts only

- pinch sea salt
- 2 cups peeled, sliced carrots
- 2 cups peeled, diced sweet potatoes
- 2 cups fresh green beans cut into bite-size pieces
- 2 quarts organic sugar-free vegetable stock
- 4 cups thinly sliced green cabbage
- 1/2 tsp. blac pepper
- 1/4 cup chopped parsley leaves
- 2 Tbsp. lemon juice

- Lemon and Garlic Chicken (from Melskitchencafe.com)
- Juice of 1 lemon, approximately 3 tablespoons
- 3 tablespoons olive oil (use oil only in Phase3)
- 1 teaspoon minced garlic, about 2 medium cloves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1 pound chicken breasts (I usually cut really thick chicken breasts down to thin them out and make the pieces a little smaller so they absorb the marinade better)

- Cake:
- 1 c coconut flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 8 eggs
- 2/3 c coconut oil
- 1/2 c honey or palm syrup
- 4 Tbs vanilla extract
- Pastry Cream Filling:
- 2 cups whole-fat canned coconut milk
- 2 Tbs vanilla extract
- 6 egg yolks
- 2/3 c palm or turbinado sugar
- 1/4 c arrowroot powder
- 1 Tbs coconut oil
- Glazed Strawberries:
- 1 lb ripe strawberries, hulled
- 1/2 c palm or turbinado sugar
- 4 1/2 tsp arrowroot powder
- 1/4 c cold water
- 1 tbs coconut oil
- 2 tsp lemon juice
- Vanilla Frosting:
- 2 cups arrowroot powder
- 2 cups palm or turbinado sugar
- 1/2 c palm oil shortening
- 1/4 c whole-fat canned coconut milk
- 1/2 tsp vanilla extract
- Chocolate Ganache:
- 4 oz dairy-free chocolates (I use Enjoy Life brand)
- 1/4 c whole-fat canned coconut milk
HAM-CRUSTED BREAKFAST QUICHE

- 6 oz. smoked ham, thinly sliced
- 1 cup half-and-half
- 6 eggs
- Salt and pepper, to taste

- 2 ounces unsweetened baking chocolate
- 1/4 cup butter
- 6 packets powdered stevia
- 2 eggs
- 1 cup powdered erythritol
- 3 droppers vanilla liquid stevia
- 1 teaspoon vanilla extract
- 1 cup gluten free flour blend* (See note)
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1/2 cup sugar free powdered sugar

In a saucepan, combine the lentils with 2 cups water
- Phase 1, Serves 4
- Preheat oven to 400 degrees
- 1 cup dry lentils
- 3 large or 4 medium sweet potatoes, peeled and chopped
- 1/2 cup unsweetened rice milk
- 2 large yellow onions, chopped
- 2 cloves garlic, minced
- 5 carrots, peeled and chopped

- 2 tsp tamari
- 1/2 tsp sea salt
