Roasted Nuts

Combine any mixture of the above as desired or buy a bag or two of Diamond Mixed Nuts
- 1/2 lb. walnuts
- 1/2 lb. almonds
- 1/4 lb. filberts
- 1/4 lb. pecans
- 1/4 lb. brazil nuts

- Directions
- Combine any mixture of the above as desired or buy a bag or two of Diamond Mixed Nuts. Place on baking pan (with sides) and roast in preheated 350 degree oven for about 15-20 minutes. Be sure not to burn or dry out nuts.
- Remove and place in basket to cool and serve with figs and nut crackers. Place a bowl on the table for shell scraps for easier cleanup. Crack desired nuts. Slice open fig and flatten a bit to have a larger surface. Add nuts and close fig.

1. In a sauté pan or stockpot over medium heat add the olive oil
- 3 tablespoons extra-virgin olive oil
- 2 large yellow onions, chopped
- 1 teaspoon fresh cracked pepper, plus more to taste
- 10 large organic carrots, cut into 1⁄4- inch pieces
- 6 cups Chicken Broth, Roasted Vegetable Broth, or store-bought low-sodium (MSG- free) version
- 1 inch fresh ginger root, peeled and grated
- 1 cup fresh-squeezed orange juice
- Salt, to taste
Bacon Baked Beans

Directions Mix all ingredients together after draining cans of beans
- 11-14 oz. can of each:
- 1 11-14 oz. can kidney beans
- 1 11-14 oz. can cannelini beans
- 1 11-14 oz. can baked beans
- 1 11-14 oz. can lima beans (optional)
- 1/2 lb. ground beef, browned and drained
- 1/2 C. ketchup
- 2 Tbs. mustard
- 1 C. brown sugar
- 2 Tbs. Worcestershire sauce
- Optional ingredients:
- 1 can drained pineapple
- 1/2 lb. browned and drained Italian sweet or hot sausage broken up into bits
- 1 tsp. ground black pepper
- 1 3 oz. pkg. real bacon bits

Preheat oven to 325 degrees Fahrenheit
- Mint Chocolate variation:
- 1-15 ounce can of unseasoned black beans
- OR 1 1/2 cup cooked beans, any color
- 5 large eggs
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon sea salt
- 6 tablespoons unsalted organic butter OR coconut oil
- 1/2 cup of honey or other sweetener + 1/2 teaspoon pure stevia extract
- 6 tablespoons unsweetened cocoa powder
- 1 teaspoon aluminum-free baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon water (omit if using honey)
- 2 teaspoons mint extract (in place of 2 teaspoons vanilla)
