Turkey Jambalaya

Cooking Light NOVEMBER 2001
- 1 tablespoon olive oil
- 1 1/2 cups chopped onion
- 1 teaspoon bottled minced garlic
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 2 1/2 teaspoons paprika
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground red pepper
- 1/2 teaspoon black pepper
- 1 cup uncooked long-grain rice
- 2 cups fat-free, less-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 2 cups shredded cooked turkey
- 6 ounces andouille sausage, chopped
- 2 tablespoons sliced green onions
Egg Casserole

Directions Grease casserole dish
- 5 large eggs, hardboiled
- 1 7-oz. bag of potato chips
- 1 can cream of mushroom soup
- 1/2 C. milk
Lazy Day Cobbler

Mix dry ingredients and add milk
- 1 stick (1/2 cup) margarine
- 1 cup sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 large can peaches or 2 small cans
Green Olive, Walnut and Pomegranate Salad

Preheat the oven to 350°F
- ¾ cup walnuts
- ½ cup pitted green olives, washed and coarsely chopped
- ¼ cup unsalted shelled pistachios, coarsely chopped
- ½ cup pomegranate seeds
- 2 small shallots, peeled and finely diced
- 1 red serrano chile, seeded and finely diced
- 1 tablespoon shredded flat-leaf parsley leaves
- 1 tablespoon olive oil
- 1 tablespoon walnut oil
- Splash of pomegranate molasses
- Juice of ½ lemon
- Sea salt
- Freshly ground black pepper
Nut Butter Protein Bars

If your nut butter is from the fridge, gently warm it until it is a stir-able consistency
- 1/2 cup nut butter
- 1/4 cup protein powder (Jay Robb)
- 3/4 tsp baking soda (trust me)
- 1/4 cup Sucanat or brown sugar (40g)
- 2 tbsp applesauce (30g)
- tiny pinch salt if desired (I use 1/16 tsp.)
No Roll Apple Pie Crust

Directions While butter is melting, mix the other ingredients for the crust in a bowl
- Crust:
- 2 sticks butter, melted
- 3 C. flour
- 1/2 C. sugar
- pinch of salt
- Filling:
- 6 apples, cut up into pieces
- 3/4 C. sugar
- 1/4 C. brown sugar
- 2 Tbs. flour
- 1 tsp. cinnamon
- dash of nutmeg
- dash of salt
- 2 Tbs. butter
Wheat Belly Pizza

Preheat the over to 350°F
- 1/4 cup extra-virgin olive oil, divided
- 1 lb bulk or loose sausage
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 wheat-free pizza crust
- 2 cups sugar-free pizza or marinara sauce
- 8 oz fresh mozzarella, thinly sliced
- 1/2 red or green bell pepper, chopped
- 1 tsp dried oregano
- 2 tbsp grated Parmesan or Romano cheese
Crock pot Ham and Potatoes

Mix all together, put in a greased crock pot and cook 6 hrs
- 3 cups cubed ham
- 28 oz. O'Brien hashbrowns
- 2 cans cheese soup
- Milk if needed
- Pepper to taste
- 2 oz jar pimentos

- 1 cup hazelnuts
- 2 tablespoons unsalted butter, melted, plus more for the pan
- 1 1/2 cups all-purpose flour, spooned and leveled
- 1/3 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup whole milk
- 2 large eggs
- 1 tablespoon finely grated orange zest
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups fresh or frozen cranberries

- 2 sticks margarine
- 3/4 cup oil
- 1 egg
- 1 Tablespoon milk
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 cups flour
- 6 oz chocolate chips
- 1 teaspoon cream of tarter
- 1/4 cup nuts
