Vanilla Bean Coconut Macaroons

Preheat oven to 350 degrees ºF
- Servings: 20
- Preparation Time: 10 minutes
- 2 cups unsweetened coconut
- 1/4 cup virgin coconut oil, melted
- 2 tablespoons full fat coconut milk cream (cream at top of refrigerated milk)*
- 1/4 - 1/2 cup granulated sweetener*
- 3/4 teaspoon gelatin
- 1/4 teaspoon vanilla beans (1-2 beans)
- 1/8 teaspoon salt
Date/Coconut/Carob Balls

Throw it all in a food processor, roll into balls, coat with coconut and enjoy
- 15 Pitted Dates
- 1/8 c Carob Powder or Cocoa Powder
- 1 bag Unsweetened Shredded coconut
- Peppermint Oil (about 1 tsp per every dozen dates)

Crush Oreo’s. In the large bowl of a mixer, cream together cream cheese and butter
- 1 package Oreo’s
- 2 small boxes vanilla instant pudding
- 2 (8 oz. each) pkgs. Cream cheese, softened
- 1/2 stick margarine, softened
- 12 oz. Cool Whip
- 3 c. milk or half & half
- 1 c. powdered sugar

- Dairy free hollandaise sauce:
- The sauce can be made ahead and refrigerated; reheat slowly on low heat, stirring constantly. This sauce is also great as a dipping sauce for veggies.
- 2 medium egg yolks
- 1 Tbls lemon juice
- 3 Tbls coconut oil, heated to about 95 degrees
- 1/2 tsp sea salt
- 1/8 tsp paprika
