Shaun T's Oatmeal and Peanut Butter Ricotta Cookies

Preheat oven to 350°F degrees
- Makes 5 cookies (1 serving)
- 1 tbsp natural peanut butter
- 1/4 cup old-fashioned oats
- 1/4 cup reduced-fat ricotta cheese
- 2 packets (or to taste) Stevia
- 1/4 tsp baking powder
- 1/2 tsp flaxseed
- 1 egg white
- Dash of cinnamon
Burritos

This makes the tortilla less messy
- Spray a small skillet with oil. Put the scrambled eggs in, sprinkle on the shredded cheese and cover it all with the flour tortilla, cook a couple of minutes.
- Take it out and roll up.
- The egg sticks to the tortilla and the cheese makes the tortilla stay rolled up.
Wilted Leaf Lettuce*

- 2 large bunches leaf lettuce
- 2 teaspoon sugar
- 2 green onions, sliced
- 4 slices bacon
- 1/4 cup cider vinegar
- 2 Tablespoons water
Buttermilk Biscuits

Makes 8-10 large biscuits Preheat the oven to 450 degrees
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt (or more to taste)
- 8 tablespoons (1 stick) cold butter, cold
- 3/4 cup of buttermilk

Add all ingredients and put into food processor, blend well
- 1 can black beans rinsed
- 4 droppers of vanilla flavored stevia or any flavor
- 4 TBS of cocoa
- 1/4 cup coconut
- 1/4 almond flour or coconut flour
- 3 TBS of nut butter (I used Cashew)
- 1/2 tsp vanilla

- 1/2 cup softened Coconut Cream Concentrate (well mixed)

Fudge Brownie Chocolate Protein Bars

Homemade Chocolate Protein Bars: Preheat the oven to 350 F
- Adapted from Black Bean Brownies
- 1 1/2 cups black beans (1 15-oz can, drained and rinsed very well) (250g after draining)
- 3 tbsp dutch or regular cocoa powder (15g)
- 7 tbsp chocolate protein powder (45g)
- scant 1/4 tsp salt
- 1/3 cup pure maple syrup or agave or honey (Honey is not for strict vegans.) (75g)
- pinch pure stevia, or 2 tbsp sugar of choice
- 3 1/2 tbsp coconut or vegetable oil (35g)
- 1 tbsp pure vanilla extract
- 1/2 tsp baking powder
- 1/3 cup to 2/3 cup chocolate chips (Not optional; omit at your own risk.)

- 1 cup chopped walnuts
- 2 tablespoons chopped onion

- 2 tablespoons all-purpose flour
- 1/2 cup 2% milk
- 1 cup half-and-half cream
