Coconut Butter Cups

Mix together the chocolate and fill paper muffin cups to about 2/3
- For the chocolate:

- 2 tablespoons coconut oil
- 1 tablespoons cocoa or carob
- 2 tablespoons coconut flour
- 1 tablespoons nut butter
- 1 tablespoons maple syrup
- For the filling:
- 1 tablespoons coconut cream concentrate
- 1 teaspoon nut butter
- optional: salt and sweetener for a peanut butter-like taste
Pimiento Cheese Spread

Put all ingredients in a blender container; cover and blend on speed 6 until smooth
- 2 Tablespoons milk
- 2 Tablespoons canned pimiento
- 1 cup sharp Cheddar cheese, cubed

- 3/4 3/4 3/4 cup warm water (105°F-115°F)
- 1 1/2 1 1/2 1/2 teaspoons active dry yeast
- 1 1 1 teaspoon sugar
- 1 1 1 cup brown rice flour
- 1/4 1/4 1/4 cup tapioca flour/starch
- 1/4 1/4 1/4 cup potato starch (not potato flour)
- 1 1 1 teaspoon xanthan gum
- 3/4 3/4 3/4 teaspoon salt
- 3 3 3 tablespoons olive oil
- 2 2 2 eggs*
- 1/2 1/2 1/2 teaspoon balsamic vinegar
