Michael Symon's No-Bake Granola Bars

These granola bars will keep you full throughout the day
- 1 cup roasted almonds
- 1/2 cup old-fashioned oats
- 1/4 cup raisins
- 1/2 tsp kosher salt
- 1 cup pitted dates
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1 tsp vanilla extract
Kid-Approved Healthy Cake

Preheat oven to 350 F, and line two 8-in round pans (or one 13×9) with parchment paper
- 1 1/3 cups milk of choice (320g)
- 1 1/2 tbsp white or apple cider vinegar (23g)
- 1 tbsp pure vanilla extract (15g)
- 1/4 cup plus 1 tbsp veg or melted coconut oil (50g)
- 2 loosely-packed cups spelt or all-purpose flour (or Bob’s gf, plus 1 tsp xantham gum) (240g)
- 1 tbsp baking powder
- 1/2 tsp salt
- 2/3 cup xylitol or sugar of choice (140g)
- 1/8 tsp pure stevia, or 1/4 cup more sugar of choice
- jam, frosting, sprinkles or Hannah’s Homemade Sprinkles
Coconut Cream Cupcakes

Preheat oven to 350 degrees
- 6 eggs
- 1 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon coconut liquid stevia
- 1 banana
- 1/4 cup coconut sugar
- 1 cup coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Coconut Cream Frosting
- 7 ounces organic creamed coconut/coconut butter
- 4 tablespoons water
- 4 droppers full coconut liquid stevia
- Optional: toasted unsweetened coconut flakes

- 1 cup desiccated (dried) coconut
- 1 cup white rice flour
- 1/2 cup shredded coconut

- 1 1/2 tbsp white or apple cider vinegar (21g)
- 2 tsp pure vanilla extract
- 1/2 cup applesauce (120g)
- 1 cup mashed banana, measured after mashing (240g)
- 3 tbsp vegetable or coconut oil (30g)
- 1 cup rolled oats (90g)
- 1 1/2 cup spelt flour (200g) (Bob’s gf also works here)
- 1/2 cup sugar of choice or xylitol (100g)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup mini chocolate chips, optional
