Deli-style Rye Bread

Mix and store the dough, on baking day bake a 1 pound loaf
- Cornstarch wash:
- 3 cups lukewarm water
- 1 1/2 tablespoons granulated yeast (2 packets)
- 1 1/2 tablespoons Kosher salt
- 1 1/2 tablespoons caraway seeds, plus more for top
- 1 cup rye flour
- 5 1/2 cups bread flour or unbleached all-purpose flour
- cornmeal for pizza peel
- 1/2 tsp cornstarch
- 1/2 cup water
Quiche Lorraine

- 8 slices bacon
- 1 cup swiss cheese (4 ounces)
- 1/2 cup finely chopped onion
- 4 large eggs
- 1 1/2 cups half and half
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon cayenne red pepper
- 1 pastry shell (Pillsbury prepared pie crust works good)
Old-fashioned Baked Rice Pudding

Stir all ingredients (except raisins ) together in a buttered 1 1/2 quart casserole
- 1/2 cup long grain rice
- 2 cups milk
- 1 cup water
- 1/2 tablespoons butter
- 1/3 cup sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/3 cup raisins
Carmel Apple Pudding

- Batter:
- 3/4 cup flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 1/2 cups pealed apples, chopped (2 apples)
- Sauce:
- 3/4 cup brown sugar
- 1/4 cup butter
- 3/4 cup boiling water
Shepherd's Pie

Watch salt content, if using beef liquid
- BOTTOM
- 2 tablespoons butter
- 1 medium chopped onion
- 500 grams lean ground beef
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- GRAVY
- 1 can mushroom soup
- 1 tablespoon flour
- 2 sachets of beef OXO or 2 tbsp of a liquid beef OXO
- TOPPING
- 1 tablespoon butter
- 3 cups cooked mashed potatoes
Seafoam Frosting

Put sugar, water and egg whites into top of a double boiler and beat well with beater
- 1 1/2 cups brown sugar, packed
- 5 tbsp water
- 2 large egg whites, unbeaten
- vanilla
Orange Butter Frosting

Blend butter and sugar. Stir in juice and orange peel; beat until smooth
- 1/3 cup soft butter or margarine
- 3 cups icing sugar
- 3-4 tbsp orange juice
- 2 tsp grated orange peel (optional)
Pumpkin Pie 10"

- 3 eggs
- 1 3/4 cups canned pumpkin (398ml can)
- 1 cup sugar
- 3/4 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/2 teaspoon cloves
- 1 1/2 cups evaporated milk (370ml can)

- 3/4 cup shortening (1/2 butter)
- 3/4 cup icing sugar
- 1 1/2 cups flour
- MIDDLE:
- 2 eggs
- 1 cup brown sugar (packed)
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 cup chopped walnuts
- 1/2 cup flaked coconut
- TOP- Orange-Lemon Icing:
- 1 1/2 cups icing sugar
- 2 tablespoons butter
- 3 tablespoons orange juice
- 1 teaspoon lemon juice
