Rice Pilaf

In medium saucepan, cook onion, mushrooms, celery, and garlic in hot butter until tender
- 1/2 cup onion, chopped
- 1/2 cup sliced fresh button mushrooms or 1 can sliced mushrooms
- 1/4 cup chopped cellery or green sweet pepper
- 1 clove garlic, minced
- 1 tbsp butter or margarine
- 3/4 cup uncooked long grain rice
- 1 1/2 tsp instant chicken, beef, or vegetable bouillon granules
- 1/4 tsp black pepper
- 2 slices bacon, crisp-cooked, drained, and crumbled, or 1/4 cup finely chopped cooked ham or Canadian bacon
Mustard Sauce

Combine all ingredients
- 1 cup Miracle Whip
- 2 tbsp prepared mustard
- 1/2 tsp poppy seed
Mushroom Fettuccini

Heat a medium sized non-stick skillet to medium-high
- 2 tbsp butter
- 2 cups sliced mushrooms
- 1 clove garlic, minced
- 1 1/2 cups real whipping cream
- 1 lb dry fettuccini noodles
- 1/2 cup chopped fresh parsley
- 1/2 cup grated Canadian parmesan cheese
- Salt and fresh ground pepper to taste
Baked Asparagus with Balsamic Butter

Preheat oven to 400 degrees F (200 degrees C)
- 1 bunch fresh asparagus, trimmed cooking spray
- salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 1 teaspoon balsamic vinegar
Pistachio Dessert

Combine crust ingredients and spread into a 9 by 13 inch pan
- Crust:
- 1 cup flour
- 1 cup margarine
- 2 tbsp sugar
- 1/4 cup chopped pecans
- First layer:
- 1 8-oz pkg cream cheese
- 2/3 cup icing sugar
- 1/2 of a 17 oz carton of Cool Whip
- Second layer:
- 2 1/2 cups milk
- 2 pkgs instant pistachio pudding
- Remaining Cool Whip
Spice Drop Cookies (Boiled Raisin)

In a small pot, boil raisins in the coffee for 5 minutes or until liquid reduces to 1/2 cup
- 2 cups raisins
- 1 cup strong coffee
- 1 cup shortening
- 2 cups brown sugar
- 3 eggs, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1 tsp cinnamon
- 4 cups flour
Grilled Balsamic Salmon on a Bun

Thaw salmon fillets according to package instructions
- 1 lb Wild Pacific Salmon fillets, thawed
- 3 tbsp maple syrup
- 3 tbsp balsamic vinegar
- 1 tbsp finely chopped fresh rosemary
- 1/2 tsp each salt and pepper
- 1 tbsp water
- 3 peeled garlic cloves
- 1/3 /cup mayonnaise
- 4 crusty rolls
- 3 Arugula leave or lettuce
Whipped Shortbread

Combine and beat all ingredients until very light and fluffy (about 10 minutes)
- 1 cup butter
- 1 1/2 cup flour
- 1/2 cup icing sugar
Turkey Noodle Soup

In stockpot or large saucepan, combine carcass, water, bay leaf, celery and onion
- Soup:
- 1 turkey carcass
- 10-15 cups water (enough to cover the carcass)
- 1 bay leaf
- 1 stalk celery (including leaves), chopped
- 1 onion, quartered
- 1/3 cup broken noodles
- 2 stalks celery, chopped
- 1 carrot, chopped
- 3 green onions, sliced
- 1/3 cup grated zucchini or frozen peas
- 1 tsp dried basil
- 1 tsp dried thyme
- dash hot pepper sauce
- salt and ground pepper
Pulled Pork with Root Beer Sauce

1. Trim fat from meat. If necessary, cut meat to fit into a 3 1/2 to 5 quart slow cooker
- 1 2 1/2 to 3 pound pork sirloin roast
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp cooking oil
- 2 medium onions, cut into think wedges
- 1 cup root beer*
- 2 tbsp minced garlic
- 3 cups root beer (two 12-ounce cans or bottles)*
- 1 cup bottled chili sauce
- Several dashes bottled hot pepper sauce (optional)
- 8 to 10 hamburger buns, split (toasted, if desired)
- Lettuce leaves (optional)
- Tomato slices (optional)
