Cranberry Muffins

Combine cranberries, 1/3 cup sugar, orange juice and rind
- 2 cups frsh cranberries, chopped
- 1/3 cup sugar
- 6 tbsp orange juice
- 1 tbsp orange rind
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup margarine
- 1 cup sugar
- 1 egg
- 1/2 cup pecans (optional)
Singapore Rice Noodles

Directions Bring a large pot of water to a boil
- 7 -8 ounces fine dried noodles ( rice sticks)
- 3 large eggs
- 2 tablespoons curry powder
- 2 teaspoons oriental sesame oil
- 5 tablespoons peanut oil or 5 tablespoons vegetable oil
- 8 ounces medium shrimp, shelled and deveined
- 4 ounces raw lean pork, trimmed and cut into 1/4 inch julienne
- 4 ounces boneless skinless chicken breasts, cut into 1/4 inch julienne
- 1 tablespoon minced fresh ginger
- 1 garlic cloves, minced
- 1 -2 fresh hot chili peppers, partly seeded and slivered
- 3 ounces Chinese barbecue pork or 3 ounces smoked ham, cut into 1/4 inch julienne
- 1/2 red bell peppers, cut into 1/4 inch julienne
- 1/2 green bell peppers, cut into 1/4 inch julienne
- 12 whole scallions, cut diagonally into 1 1/2 inch lengths
- 1 1/2 cups fresh bean sprouts or 1 1/2 cups shredded napa cabbage
- 1/2 cup chicken broth
- 3 tablespoons soy sauce
- 2 tablespoons dry sherry
- 1 pinch salt
- 2 tablespoons chopped fresh cilantro
Chicken Tetrazzini

Cook spaghetti until tender
- 1/2 500 g pkg spaghetti, broken in 5 cm pieces
- 284 mL can sliced mushrooms or 250 ml fresh
- 1 medium onion, chopped
- 1 green pepper, julienned (optional)
- 1 red pepper, julienned (optional)
- 1 clove garlic, crushed
- 50 mL butter
- 2 mL celery salt
- 1 mL nutmeg
- 2 mL marjoram
- Dash cayenne pepper
- 425 mL evaproated milk
- 284 mL cream of chicken or mushroom soup
- 500 mL cubed cooked chicken
- 50 mL grated Parmesan cheese
- 125 mL grated sharp Cheddar cheese
Chicken carbonara

In medium bowl, beat eggs and cream together until just blended
- 4 eggs
- 1/4 cup heavy cream, at room temperature
- 1 cup Parmesan cheese grated
- 1-2 cups fully cooked sliced chicken breast
- 16 oz dried fetuchine
- 1/4 cup butter, softened
- 1/2 lb bacon, cooked and cut into small pieces
- 1/4 cup parsley, chopped
- pepper to taste
Maple Teriyaki Pork Chops

In a large glass bowl, whisk together the maple syrup, white wine, soy sauce, green onion, pepper and garlic
- 1/3 cup maple syrup
- 1/3 cup dry white wine
- 3 tbsp soy sauce
- 1 green onion, chopped
- 1 tsp garlic, crushed
- 6 x 4 oz boneless pork loin chops
- 1/4 tsp fresh ground pepper
Spaghetti Sauce

Heat olive oil. Saute onions, green peppers, celery, garlic, oregano, basil, thyme, and bay leaves for 5 minutes
- 2 tbsp olive oil
- 2 large onions
- 1 green pepper, diced
- 2 celery stalks, diced
- 3 medium garlic cloves, finely chopped
- 2 tsp oregano
- 1 tsp basil
- 1/2 tsp thyme
- 2 bay leaves
- 2 lbs lean ground beef
- 3 - 19 oz cans tomatoes (drained, reserve juice and puree tomatoes)
- 2 tsp brown sugar
- 10 oz chicken stock
- 1 cup dry red wine
- 11 oz tomato paste
- 14 oz tomato sauce
- salt and pepper to taste
- 2 cups old cheddar cheese (grated)
- 4 cups chopped mushrooms
Almond Slice

Melt margarine and marshmallows and mix well
- 1/3 cup margarine
- 30-40 large marshmallows
- 2 1/2 cups corn flakes
- 1 cup coconut
- 1 cup sliced almonds
Crazy Crunch Popcorn

Mix popcorn, pecans and almonds on a cookie sheet
- 2 quarts popped popcorn
- 1/3 cup pecans
- 2/3 cup almonds
- 1 1/3 cup sugar
- 1 cup margarine
- 1 tsp vanilla
- 1/2 cup corn syrup
Shortbread Cookies

Beat butter and icing sugar until fluffy
- 1 lb butter
- 1 cup icing sugar
- 3 cups flour
- 1 cup corn starch
Cheddar Sauce

Combine all ingredients. Warm until cheese is melted
- 1/2 cup Miracle Whip
- 3 tbsp milk
- 1/2 cup shredded cheddar cheese
