- 1/3 cup shortening

- 3/4 cup sugar

- 1/2 cup raspberry jam

Cranberry Orange Loaf

- 2 cups all purpose flour
- 1 cup frozen or fresh cranberries chopped
- 3/4 cup sugar
- 1/2 cup chopped walnuts

- 1/3 tsp salt

- 1 tsp grated orang rind
- 2/3 cup orange juice

Potato Corn Chowder

In a large pot, swirl oil and fry bacon
- 1 tbsp oil
- 2 slices back bacon - diced
- 1 medium onion diced
- 1 small celery stalk diced
- 1 large potato diced
- 1 1/2 cups chicken broth
- 14 oz can (398 ml) cream corn
- 1 1/2 cups (375 ml) kernel corn
- 1 can (385 ml) evaporated milk
- salt, pepper and nutmeg to taste

- 1 tsp almond extract
- 1/2 tsp cream of tartar
- 3/4 cup shredded coconut
Baked Ham Stuffed Mushrooms

- 1/4 cup green onions, chopped
- 1 tbsp butter
- 2 tsp flour
- 1/4 tsp dried savory, crushed
- 1/8 tsp pepper
- 2 tbsp dry white wine
- 2 tbsp water
- 1/2 cup fully cooked ham, chopped fine
- 2 tbsp parmesan, grated
