Roasted Cornish Game Hens

Preheat oven to 375 degrees F
- 1 Tablespoon salt
- 2 Tablespoons lemon-pepper

- 6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly

Hashbrown Breakfast Bake

Heat the oven to 350 degrees
- 5 cups frozen shredded hashbrowns, thawed
- 3 cups chopped cooked ham
- 1 chopped green bell pepper
- 3 cups shredded Mexican cheese blend
- 5 eggs
- 1 1/4 cups Daisy Brand Sour Cream
- 1 cup milk
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 3/4 cup Pico de Gallo
Apple Rhubarb Crisp

Preheat the oven to 350 degrees and then make the crisp topping first
- for the crisp topping:
- Approx. 1 1/2 pounds baking apples (4 cups peeled, quartered and thinly sliced)
- 4 cups thinly sliced rhubarb (1/4 - 1/2 inch thick slices)
- 1/3 cup all-purpose flour
- 1/2 cup light brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 stick unsalted butter, room temperature
- 1 cup quick cooking oats
- 1 cup light brown sugar
- 1 cup all-purpose flour
Apple Dumplings with Rich Cinnamon Sauce

"This dessert stands on its own, but a scoop of vanilla ice cream certainly wouldn't hurt
- 3 Tbsp. softened butter, plus 2 Tbsp. for the sauce
- 1/2 packed dark brown sugar, plus 1/2 cup for the sauce
- 1 teaspoons ground cinnamon, plus 1 teaspoon for the sauce
- 1/4 cup chopped toasted pecans or walnuts
- 4 apples (any variety but Red Delicious) peeled, halved, and cored, a thin sliver cut off bottoms so apples sit flat
- 1 (15 ounce) container (2 9-inch pie crusts)
- 1 egg white
- 2 tablespoons sugar
- 2 teaspoons cornstarch
