Lentil Soup

Bring water to boil. Add lentils, vegetables, bay leaf, oregano, cumin, turmeric and cayenne
- 8 cups water or broth
- 1 cup dried lentils (rinsed)
- 1 each onion, carrot, stalk of celery, potato (chopped)
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 tablespoon cumin
- ½ teaspoon turmeric
- ¼ teaspoon cayenne
- 2 cloves garlic, minced
- Dash hot pepper sauce

- 1/3 cup rice vinegar
- 2 1/2 tablespoons soy sauce
- 1/4 cup packed light brown sugar
- 1/2 teaspoon grated fresh ginger
- 2 teaspoons Asian chili-garlic paste
- 1 tablespoon toasted sesame oil
- 1/2 cup vegetable oil
- 2 teaspoons sesame seeds , toasted
Borscht (SB)

Make this soup the day before serving
- 1 onion, chopped
- 3 cups peeled and chopped beets
- 2 celery stalks, chopped
- 1/2 red bell pepper, chopped
- 1 1/2 cups chopped mushrooms
- 1 large cooking apple, chopped
- 2 tablespoons butter
- 2 tablespoons sunflower oil
- 2 1/4 quarts stock or water
- 1 teaspoon cumin seeds
- A pinch of dried thyme
- 1 large bay leaf
- Fresh lemon juice
- Salt and pepper
- For the garnish
- 2/3 cup sour cream
- A few sprigs of fresh dill

Place the lentils in a bowl and cover with cold water
- 1 cup dried green or brown lentils
- 3 tablespoons olive oil
- 3 bacon slices, cut into small dice
- 1 onion, minced
- 2 celery stalks, minced
- 2 carrots, minced
- 2 sprigs of fresh rosemary, minced
- 2 bay leaves
- 14-ounce can plum tomatoes
- 1 3/4 quarts vegetable stock
- Salt and pepper
- Fresh bay leaves and sprigs of fresh rosemary, to garnish
Make Ahead Blueberry Pie (ATK)

- 1 recipe Double-crust pie dough
- 4 tablespoons butter, melted
- 4 whole graham crackers, crushed to fine crumbs
- 4 cups blueberries (fresh or frozen)
- 1 1/4 cups dried cranberries
- 3/4 cup sugar
- 2 tablespoons Minute tapioca
- 2 teaspoons lemon juice
