- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large onion, peeled and diced
- 2 ribs celery, diced
- 4 carrots, peeled and sliced
- 1 pound dried lentils
- 2 cups (16 ounces) canned whole tomatoes, cut into pieces
- 1 can (16 ounces) chickpeas, rinsed and drained
- 8 cups vegetables stock
- 2 cups tomato juice
- 3 teaspoons yellow curry powder
- 3 teaspoons cumin
- 2 teaspoons coriander
- 1/2 teaspoon cayenne pepper
- 1 can (16 ounces) coconut milk
- 2 tablespoons honey
- 1 1/2 cups cooked basmati rice
- 1/2 bunch fresh cilantro, chopped

- 2 large Idaho Potatoes, shredded
- 1 tablespoon Concentrated Beef Bouillon
- 1/4 teaspoon Dried Thyme
- Salt and Pepper, to taste
