Thai Corn Chowder (FN)

Cut off the corn kernels; set aside
- 4 ears corn
- 2 cups diced red-skinned potatoes (about 12 ounces)
- 3/4 cup chopped scallions
- 2 tablespoons grated peeled fresh ginger
- 4 cloves garlic, smashed
- 8 black peppercorns
- 1 stalk lemongrass, cut into thirds (optional)
- 4 tablespoons unsalted butter
- Kosher salt
- 1 red jalapeno pepper, seeded and minced
- 1 13.5-ounce can coconut milk
- 8 fresh basil leaves
- 8 fresh mint leaves
- 4 radishes, thinly sliced
- 1/4 cup roughly chopped fresh cilantro
- Juice of 1/2 lime, plus lime wedges for garnish
- 1 tomato, seeded and diced
Bacon Wrapped Sweet Potato Fries

Get your oven to 425°F and place your oven rack in the center of the oven
- 2 medium sweet potatoes, cut into matchsticks about the width of your pinky finger.
- 8 oz bacon, don’t use thick cut
Hearty Minestrone (ATK)

If you are pressed for time you can “quick-brine” your beans
- Table salt
- 1/2 pound dried cannellini beans (about 1 cup), rinsed and picked over (see note)
- 1 tablespoon extra virgin olive oil , plus extra for serving
- 3 ounces pancetta, cut into 1/4-inch pieces (see note)
- 2 medium celery ribs, cut into 1/2-inch pieces (about 3/4 cup)
- 1 medium carrot, peeled and cut into 1/2-inch pieces (about 3/4 cup)
- 2 small onions, peeled and cut into 1/2-inch pieces (about 1 1/2 cups)
- 1 medium zucchini, trimmed and cut into 1/2-inch pieces (about 1 cup)
- 2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
- 1/2 small head green cabbage, halved, cored, and cut into 1/2-inch pieces (about 2 cups) (see step by step below)
- 1/8 - 1/4 teaspoon red pepper flakes
- 8 cups water
- 2 cups low-sodium chicken broth
- 1 piece Parmesan cheese rind, about 5 by 2 inches (see note)

- 1 1/4 quarts chicken stock
- 1 1/2 cups cubed potatoes

- 1/2 cup whipping cream (optional)
- 1 1/2 tablespoons snipped fresh chives, plus a few whole chives, to garnish

- 1 large egg
- 1/4 cup heavy cream
- 1 large slice high quality white sandwich bread, crusts removed and bread torn into 1 inch pieces
- 8 ounces ground pork
- 1 small onion, grated on large holes of box grater (about 1/4 cup)
- 1/8 teaspoon nutmeg
- 1/8 teaspoon allspice
- 1/8 teaspoon ground black pepper
- 1 teaspoon packed brown sugar
- 1 1/2 teaspoons table salt
- 1 teaspoon baking powder
- 8 ounces 85 percent lean ground beef
- 1 1/4 cups vegetable oil
- 1 tablespoon butter
