Preheat the oven to 400 degrees
- 2 medium baking potatoes (about 1 1/4 pounds)
- 4 strips bacon, thinly sliced
- 2 carrots, sliced into 1/2-inch rounds
- 2 stalks celery, sliced into 1/2-inch pieces
- 24 pearl onions, peeled
- Kosher salt and freshly ground white pepper
- 1 3- to 4-pound chicken
- 1 small bunch fresh thyme, tied with string
- 8 cups low-sodium chicken broth
- 2 tablespoons unsalted butter
- 1/4 cup breadcrumbs
- 3/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese, plus more for garnish
- Pinch of freshly grated nutmeg
- 2 large eggs
- 1/4 cup roughly chopped fresh parsley
- 1/4 cup roughly chopped fresh basil

Roasted Tomato and Rice Soup (NES)

For the roasted tomatoes: preheat the oven to 425 degrees
- Roasted Tomatoes
- 12 plum tomatoes, cut into halves
- 3 tablespoons olive oil
- Salt and pepper
- Soup
- 3 tablespoons butter
- 3 whole cloves garlic, peeled
- 1 large onion, peeled and diced
- 5 carrots, peeled and sliced
- 2 ribs celery, sliced
- Roasted plum tomatoes
- 6 sun dried tomatoes, packed in oil
- 6 cups vegetable or chicken stock
- 3 cups tomato juice
- 2 tablespoons chopped fresh basil

Bring 4 quarts water to boil in large pot
- Salt and pepper
- 1 pound elbow macaroni
- 1/4 cup minced red onion
- 1 celery rib, minced
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1/8 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper

Coconut-Ginger Pineapple Upside-Down Cake (ATK)
